The Houston Chronicle published a report of the top 23 burgers in Houston and Wagyuru’s weekend-only burger made the list! And another burger shop on the list, Flippin Patties, uses Wagyuru’s ground beef. Exciting news!

When you sell a customer a 75% Wagyu genetics finished steer and it winds up having 32% digital marbling percent! 4th one this customer has bought, and they have all turned out like fullblood Wagyu quality! And the lean fat cap with that level of marbling, and the ribeye shape and marbling distribution! One lucky and happy customer! Very satisfying to make a product that customers love. This is why we Wagyu! Sired by Homozygous polled purebred bull Okufuji 9 (PB25607).

How well do EBV and EPD genomic evaluation rankings correlate with actual offspring results? In other words, how well do EBVs predict outcomes for the measured traits? If a Wagyu producer breeds some of their cows to a bull that has a relatively higher EBV (or EPD) for Marbling, and some of their other cows to a bull that has a relatively lower EBV (or EPD) for Marbling, they would expect the offspring from the calves sired by the relatively higher-ranked bull to have relatively better actual marbling, compared to offspring from breedings from the bull with a relatively lower Marbling rank, right? EBV and EPD “numbers” are supposed to predict how the offspring of an animal should be influenced by such parent. Do they? This progeny test sought to answer that question by evaluating several "high-EBV" bulls, alongside the popular foundation sire Itoshigenami TF148, for certain evaluated carcass attributes. https://www.rocking711.com/results-of-the-proof-is-in-the-pudding-progeny-test-seeking-to-evaluate-the-ebv-and-epd-systems/

A great time to be in the cattle business, financially... Live (fat) cattle futures contract prices (LE) as well as feeder calf futures contract prices (GF) sitting at all-time highs today. these are 20-year price charts. With the decisive break-out above a strong overhead resistance trendline a few months ago, prices look like they want to go even higher. It is hard to believe that live/fat cattle futures contract prices went as low as $76/CWT only 5 years ago and are now $215/CWT, almost a 3x increase in 5 years. Crazy times! And raising Wagyu cattle, for the best beef quality in the world, makes the situation even sweeter...😃

Heifer feeder calves are lower priced per unit of weight compared to steer feeder calves. And based upon experience, finished Wagyu heifers are also often discounted in terms of price per unit of weight compared to steers. Data from 658 carcasses in nine Wagyu progeny test groups showed an interesting outcome, indicating that our thinking about heifers as meat animals should perhaps be adjusted.
