Come winter, we love to utilize our spice cabinet as much as possible, and this potato salad is a shining example of the power of seasoning. Quarter 3 lb baby potatoes and boil in a large pot of salted water until fork tender, about 12 minutes. Meanwhile, finely chop 1/2 red onion. In a large mixing bowl combine the chopped onion with 3/4 cup Greek yogurt, 1/2 cup mayonnaise, 2 teaspoons Dijon mustard, 2 tablespoons Olivelle Caramelized Garlic Infused Olive Oil, 2 tablespoons apple c***r vinegar, 3 teaspoons Olivelle Butcher's Spice Blend, 1 teaspoon onion powder, 1/2 teaspoon dill w**d, and 1/4 teaspoon mustard seed. Mix until the potato dressing is evenly combined, then add the drained potatoes, tossing to coat. Cover and refrigerate overnight to let the flavors soak into the potatoes. Enjoy!
