Preserve those delicious cherry tomatoes before they're gone. It's so easy. Here's how we do it...

Slice tomatoes in half and scatter on a baking sheet. Chop your favorite fresh herbs. We like basil and thyme.

Cover generously with olive oil. Add salt (and pepper if you like). This batch we used the NOFA-NJ garlic scape sea salt.

Roast at 375 for about an hour (until they're good and cooked down). Scrape off the pan and freeze. Now you have a sweet, farm fresh addition to your favorite pasta dish in the Winter!

Cherry tomatoes just keep getting sweeter! Pick your own or grab and go. Roast and freeze for the winter. Plus, beautiful bell peppers, shish*tos (sweet frying peppers), bell peppers, eggplant, leeks, onions, potatoes, spaghetti squash, and the last of the slicing tomatoes... all grown here. We are also LOADED with our popular farm tomato sauce, cowboy candy, garlic and onion powder.

In honor of our upcoming Tomato Festival this Saturday, we thought we'd share how we preserve the splits we sort out of farm shop. We don't have a certified kitchen on the property, so we can't sell this amazing tomato ambrosia. We CAN kick it old school and jar it up for the winter.

We keep it simple. Run the tomatoes through a Kitchenaid with a strainer attachment to remove the skins and seeds, while retaining the pulp. Cook in a big ol' pot. Pour into mason jars with a couple basil leaves and a little lemon juice. Wrap in a blanket and let them can. When it's sauce time, we have a base that simply can't be beat. Jarred up 20 quarts today.

🍅 On the table in farm shop... new crops, potatoes (golds) and leeks. Plus, Jersey slicing tomatoes, red and yellow onions, garlic, eggplant, bell peppers, hot peppers, beets, cabbage, spaghetti squash, cantaloupe and more!

🌻 U-cut flowers, eucalyptus bunches and fresh herbs

🫙 Also, farm jars (homemade sauerkraut, dill pickles and pickled beets), eggs and the freezers are restocked with meats from Sickler's Circle View Farm (burgers, dogs, sausage, meatloaf mix, bacon bits). Try a farm potato salad and mix in some of those bacon bits.

Enjoy this amazing weather and spend some time on the farm!
