Since the cold front hit us this morning, (only a chilly 92 degrees today) I thought a nice recipe from my collection would be something you would all like to try. This Ranch Pea Salad recipe really knocks it out of the park. Try it and you'll see! Stop by the OKC Farmers Public Market at 311 S. Klein today from 9 am til 2 pm and pick up some Papa Pig's Pig Ranch Mix and then make that pea salad baby!

PAPA PIG'S BACON RANCH PEA SALAD SUPREME
Ready in 90 minutes
Serves 8 people

INGREDIENTS
¼ cup mayonnaise
2 Tablespoons sour cream
1 Tablespoon apple c***r vinegar
1 Tablespoon sugar
1 Tablespoon black pepper
2 Tablespoons Papa Pig’s Pig Ranch Mix
4 cups canned peas, drained
½ cup red onion, finely chopped
4 ounces cheddar cheese, shredded
4 strips bacon, fried and then crumbled
Kosher salt, to taste

DIRECTIONS
In a large bowl, stir together the mayonnaise, sour cream, apple c***r vinegar, sugar, black pepper and the Pig Ranch Mix.
Add in the peas, cheddar cheese and onions. Mix well but stir gently.
Season to taste with salt.
Sprinkle the crumbled bacon on top.
Cover with plastic wrap and chill in the refrigerator for at least one hour.

TIPS
The only tip for this dish is to eat it fast and go back for more as soon as possible. It won’t last long!
