Is anyone else flabbergasted at grocery store meat prices??
If you were to buy 1/4 of a beef directly from a farmer with an average hanging weight of 180 lbs let’s say (it can very depending on size/age/breed/feed of the animal), out the door after buying the animal share, slaughter / disposal, and processing would be around $1100.
(roughly, depends entirely on hanging weight + farmer’s pricing).
Take home product weight is 62% on average of hanging weight = 112lbs of meat out the door.
Included in that 112 lbs of meat would be your choice of cuts including:
Pot roasts (cross rib, arm roast, chuck roast)
Prime rib or rib steaks (6-7 of them)
A couple packages of short ribs
Stew meat if desired (otherwise more ground)
Soup/marrow bones for making bone broth
Knuckle bones for your dog
A brisket if desired
6-7 T bone steaks (Costco is $64 for four New Yorks 😳)
4 top sirloin steaks
A package of tenderloin steaks
Top / bottom / eye of round roasts, or more hamburger
1-2 rump roasts or ground beef
1 flank or 2 skirt steaks.
Also packaged fat to render for tallow if desired.
Usually 30-50 lbs of ground beef made up of whatever cuts you didn’t want to keep and the trim.
Now I know $1100 is a lot of money up front, but you could also find a friend to split it with you and do $550 for approx 55 lbs of meat (about $9-$10 a pound take home, again, on average.)
Also it is so much higher quality product than Costco. Josh and I were commenting on the unnatural red color of these steaks. These expensive New Yorks from the store are a ‘prime’ cut, and we have seen much nicer looking meat come through the shop at nearly half the cost take home.
Anyhow long story short: if you are going to eat red meat, to save money in the long run and get higher quality, buy a beef share directly from a local farmer, fill your freezer and have food security, enjoy ground beef that has DNA from one animal (exclusively the one you purchased), and support local farmers to help keep local farm land agricultural land and not turned into housing developments.
Big box grocery stores don’t need the income as much as local farmers do and you deserve to have access to local, quality, relatively affordable meat.
