Summer in a jar!☀️🍋

This rhubarb lemonade was an instant hit when we made it this spring. So before the summer was over we needed to make some more.

Sweet, tart and refreshing it’s the perfect drink after spending all day out in the sun.

Recipe
8 cups rhubarb juice
8 cups sugar
2-1/2 cups lemon juice

Combine in a large pot and heat together till sugar is fully disolved and not quite boiling about 190F.

Fill jars to about 1/2in headspace. Wipe down edges with a clean cloth. Put your lids on. Tighten rings till finger tight.

Put in your water bath. And water bath for 15 minutes. After that turn off the stove and let sit about 5 minutes before taking them out of the water bath. Let sit on the counter for 24 hours before checking seals and removing the rings.

We harvested our rhubarb patch one final time for the year.

First things first we are making our rhubarb juice so we can make rhubarb lemonade.

-Wash all your rhubarb stalks.

-Chop them into rough chunks

-Add to your pan with some water to cover the bottom (I used 4 cups)

- Cook until all the rhubarb is soft

-Strain the juice out with a cheesecloth

No chemical w**d killers here.

Just a machete and hard work.

It’s that time of year where the plants on the fence line have grown extra tall. Which means we need to clear all the plants off to keep our fence working.

No one likes chasing cattle in the middle of the night because the fence isn’t working.
