All About Kiwi...
Did you know that a standard serving of Kiwis is packed with Vitamin C, Potassium and fiber?
The Skin is can be eaten and is where most of the fiber is found. Fiber helps aid digestion and prevent blood sugar spikes.

The Fruit is rich in Vitamin C (auto-immune health) Potassium for heart and kidney health and...Vitamin K for heart and bone health.

The seeds contain ALA (alpha-linolenic acid) to reduce inflammation and supports heart health!

Another great recipe given to you by Neighbors Food Pantry!

Low-Fat Zucchini Bread —

1½ cups grated zucchini
1½ cups all-purpose flour
¼ cup vegetable or canola oil
½ cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon baking soda
1½ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon nutmeg, optional
1/3 cup chopped walnuts, chocolate chip morsels or pecans, optional

Directions
Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan.
Grate the zucchini. Don't squeeze it completely dry—the moisture helps replace some of the moisture the applesauce provided.
Whisk together the oil, brown sugar, egg, and vanilla.
Stir in the grated zucchini.

In another bowl, whisk together the flour, cinnamon, baking soda, baking powder, salt, and nutmeg.
Add the dry ingredients to the zucchini mixture and stir just until combined.

Fold in nuts if desired.
⅓ cup mini chocolate chips

Pour into the loaf pan and bake for 45–55 minutes, until a toothpick comes out with a few moist crumbs.
Let cool for 10–15 minutes before removing from the pan.
If you want it especially moist
I'd use ⅓ cup oil rather than ¼ cup. That's still considerably less oil than many traditional zucchini-bread recipes, which often use ½ cup or more.

Beat the summer heat by elevating your water with natural flavors and textures.
Try infusing water with fresh herbs and fruits (like mint, cucumber, or watermelon), mixing in coconut water for natural electrolytes, or snacking on water-rich foods like frozen grapes, strawberries, and oranges to boost your daily intake.

Here are a few quick ways to upgrade your hydration:

Fruity Infusions: Add sliced strawberries, blueberries, or a combination of thinly sliced cucumber and lemon to a pitcher of water and let it chill.

Sweet & Savory Pairings: Combine 6 cups of water with 1 cup of cubed seedless watermelon and 2 sprigs of fresh rosemary for a unique herbal twist.

Naturally Boosted: Mix 100% pineapple juice with coconut water and a squeeze of lime for a tropical, electrolyte-rich alternative to sugary sports drinks.

Iced Options: Freeze whole berries or mint leaves inside your ice cubes to add a slow-release burst of flavor as they melt.

How to grill fresh fruit:

Grilling fresh fruit caramelizes their natural sugars, brings out their juices and adds a smoke flavor that balances their sweetness! So next time you want to try something new with watermelon....give this a go!

Keep in mind...pieces of fruit should be cut large, use oils sparingly because oils slow down the caramelization, and grilling should be just a few minutes on each side to avoid burning.

Enjoy!
