Mountain Laurel Homestead

Mountain Laurel Homestead We dreamed of having land and living a simpler life. In 2023 we took the leap and sold our 3k sqft house and bought 17.5 acres in Elizabethton.

We will be sharing our progress, what we have learned, and of course, our cute animals!

Making peanutbutter at home is incredibly easy! You just put all the ingredients in a food processor or blender until smooth and creamy. You can add other ingredients like cocoa or cinnamon or adjust how much salt you want.

**You can heat the peanuts in the oven at 350 for 10-15 mins. This will help the nuts process faster.

**Pay close attention to your blender/food processor and make sure it does not overheat.

Found Bellwort at the edge of our property. Young stems are said to taste like asparagus and flowers can be used in salads. The roots have historically been used to treat inflammation and muscoskeleton pain by either a tea, poultice, or salve.

When spring arrives, the world sees beauty… but for me, it’s a fight to survive.
Those tiny yellow flowers you call weeds are my lifeline, my first meal after a long, cold silence.
Every petal holds hope, every drop of nectar keeps me alive—
and without me, the food on your table slowly disappears too.
So before you clear them away, before you spray or cut them down,
remember… you’re not just removing weeds,
you’re taking away a life’s only chance to survive.
Let them bloom. Let them live.
Because when you protect me… you protect your own future.” 🌼🐝---
