Mexican Chicken Ring.

Crispy outside, cheesy chicken inside, and everything came together so fast in the Thermomix.

This is one of those recipes that looks impressive but is actually easy enough for a weeknight dinner. Add salsa, avocado, or a little hot sauce on top and it disappears even faster.

My friend made this tomato soup with his new Thermomix TM7. And he also made a grilled cheese to go with it. Simple. Done right.

The soup came out smooth and rich. Fresh tomatoes, garlic, a touch of cream. No shortcuts. No cans.

My friend .pool2020 made a blue cheese and pear dip with her Thermomix and it turned out so good. Creamy, a little tangy, and just the right touch of sweet.

It literally took her minutes. No stress, no mess.

She served it with crackers and sliced apples and it was gone right away.

I will definitely make this next time I need something quick to put out. And so should you! It feels a little fancy but it is actually so easy.

Juicy baked chicken with cranberries and rosemary. Sweet. Savory. Perfect balance.

Everything was prepped in the Thermomix, which saved time and kept things clean.
While the chicken baked, my TM7 handled the sides. Steamed potatoes and crisp green beans.

Another passion of mine, other than Thermomix and teaching, is pickleball. This was my first time ever playing in a pickleball tournament. Actually, my first tournament in any sport.

I was so nervous. I kept thinking I wasn’t ready and was regretting having signed up. But it was for a good cause, , so I showed up anyway and decided to just have fun.

And lo and behold … my partner and I ended up winning gold in our division! 😬

Moral of the story:

• Show up, even when you feel unprepared
• Don’t let fear make your decisions
• You’re more capable than you think
• Have fun. It changes everything
