Episode 7: 6 Gen Zin & Whipped Blue Cheese “Date” Night Dip 🩵
Serves 4
Ingredients
• 3 oz cream cheese, room temperature
• 3 oz Original Blue Cheese, room temperature
• 4-5 large Medjool dates, pitted and quartered
• 3 oz prosciutto
• ¼ cup walnut halves
• 1-2 Tbsp agrodolce
• Freshly cracked black pepper
• Flaky sea salt, optional
• Chives, finely sliced
• Fresh, soft, airy bread, such as ciabatta or pan de cristal
Recipe:
1. Add the cream cheese to a food processor and process until smooth and aerated, scraping down the sides as needed. Add the blue cheese and process again until fully combined and creamy.
2. Spoon the whipped blue cheese onto a shallow plate or low bowl and use the back of a spoon to create broad swirls. Cover and refrigerate until ready to assemble.
3. Arrange the prosciutto on a parchment-lined sheet pan and bake at 375°F for 8–12 minutes, or until browned and crisp. Let cool completely, then break into irregular pieces.
4. Toast the walnuts at 350°F for 6–8 minutes, until fragrant. Let cool completely. Break some in half and crush some for variation in texture.
5. Scatter the dates, crispy prosciutto, and toasted walnuts over the whipped blue cheese. Finish with freshly cracked black pepper and flaky sea salt, if using, then drizzle with the agrodolce. Garnish with finely sliced chives.
6. Warm the bread in a low oven, then tear into large pieces and serve immediately alongside the dip with a glass of 6 Gen Zin.
👩🏼🍳Chef’s Notes
• Adjust the blue cheese to your taste. I like equal parts cream cheese and blue cheese, but for a milder version, increase the cream cheese; for blue cheese lovers, do the opposite!
• Make it ahead. The whipped blue cheese can be made a day in advance. Spread it into your serving dish, cover well, and refrigerate until you’re ready to assemble.
• Choose a soft bread. Airy ciabatta or pan de cristal is ideal - you want a bread that’s tender and pillowy.
• Room temperature matters. Let both cheeses come to room temperature before blending. They’ll blend more smoothly and incorporate more air for a lighter texture.
