We process an animal every 2 weeks, and half of each animal is reserved for customers who have ordered quarter or half animals. This means that half of each animal is sold many months in advance, leaving approximately 150 pounds of meat from each animal for us to use to stock our store and supply a local business with sausage and beef sticks. For example, when we get one hundred pounds of ground beef (even with a limit of fifteen pounds each customer), that only fulfills seven orders, and we know many more than seven people are waiting for us to have stock!

We are not taking pre-orders via phone or email. We will post inventory on our website when it is available and hope at some point to be able to have an ample supply again. All we can do is keep on with our current schedule.
We appreciate those of you who remain steady customers even in this frustrating time.
