Tongue taco Tuesday. Tacos de lengua.

I’ve already braised and peeled the tongues. Now we slice (or shred) and fry up until edges are crispy. Top with some lime to cut the richness and serve however you like to eat tacos. 👩‍🍳 💋

Maren’s favorite part to eat from a cow is the tongue. She’s a special kid. Here, we have three cow tongues, all so different. Top, I believe is from a grass fed, grain finished cow. Middle is from grass fed and finished, a little smaller and already skinned from the butcher, unfortunately. The bottom, I really don’t remember, it’s tiny, and not labeled. Is it even a cow tongue? It’s not a sheep.

2027 🍓 crop is in! 150 plants in staggered rows with a 3’ wide walking path that I vow to maintain next season 🤞. The path still needs mulched and the plants will also get mulched once the weather cools down consistently. Garlic next.

I was filming my garden cleanup crew in action, helping me prep this bed for strawberry planting, when my gander came in for some cuddles. I don’t go out of my way to snuggle my geese, but when they offer, I accept. It would be rude not to.

What a pleasant surprise! I was able to milk Lambie tonight for the first time in months. Her three little (big) milk goblins have finally weaned themselves at just shy of seven months old. I stopped separating her lambs overnight in June when we went on vacation and never resumed for various reasons.

Im going to cherish this in my espresso tomorrow.

“Cheddaring” is the process of cutting the knitted curd into slabs and stacking and arranging those slabs to facilitate whey drainage. What I’m showing in the video is the post-cheddaring process: milling, salting, and pressing.

Cheddar cheese 2 is currently air drying before heading to the cheese fridge.

I’m really impressed by how well my bucket press works and it cost me $0 in new materials.
