I’ve had a heck of a time expanding my Muscovy flock. No luck with shipped hatching eggs, will never make that mistake again. Predation. Higher male:female ratios. Poor luck timing locally available ducklings to my broody goose/ducks. I figured if I was buying goslings I might as well grab some Muscovy. I’ve got 6 ducklings; fingers crossed for at least a breeding trio and if I end up with more males, in the freezer they’ll go.

I impulsively purchased goslings. I LOVE goslings. I miss having a small flock and wanted my remaining goose to have a flock of her own. I was hoping to sneak them under her before her two duck eggs hatched but she had other plans, so I’m brooding them with some other new additions. Toulouse geese are used for eggs, meat, and grazing/weeding and that’s the purpose they’ll serve here. Enjoy this sweet stage…they’re full of joy and chatter. ❤️

This year’s batch of freedom rangers grew out so nicely. I raise for 10 weeks, always have, it works for us. They are fed a fermented corn and soy free organic broiler feed, supplemented with sheep milk clabber and kefir, garden weeds and pasture. They’re raised outside with the ability to access shade and shelter, dust bathe, and forage for themselves. Here, they’re cleaning up some fallen ripe mulberries.

I don’t like cilantro. Well, I guess I’m a weird one who tolerates it in salsas but I don’t ever cook with it. I planted it ONCE, like six years ago, just to let it go to seed so I could harvest coriander. I LOVE coriander. I didn’t want a sea of cilantro, yet here I am. 🤪

My favorite method for preserving parsley is the “cigar” method. Once frozen, remove the roll from the freezer bag, cut off what you need and place back in bag.

🍓 Why do strawberry jam recipes take a perfect fruit and ruin it with copious amounts of sugar?

🍓 Have you noticed when you cook the strawberries to oblivion in order to can them they no longer taste fresh and vibrant?

🍓 My workaround to avoid overcooking and too much sugar is making a low sugar freezer jam with Pomona's Pectin and a low sugar no pectin strawberry freezer sauce.

A con to making freezer jams is obviously having the freezer space to do so, but the pros outweigh the only con for me and after lots of experimentation this is what suits my family the best. Fresh strawberry flavor year round is worth it. This year I sweetened lightly with fresh honey harvested last week from some comb that needed to be scraped from a few frames.

I had to remove some wonky honeycomb from a hive last week. To extract the honey I used the crush and strain method and it yielded about 5 cups. I left the wax out for the bees to clean up over the weekend and next I’ll render it down with previously saved wax to use in my products.
