🌎🍄 At Ellijay Mushrooms, we believe a healthy farm is about much more than growing mushrooms—it’s about creating a thriving ecosystem where nature can flourish.
Every log, leaf, and patch of soil on our farm provides a home for the tiny creatures that keep our environment healthy. From hardworking worms enriching the soil, to pollinators like bees supporting local plant life, to the magical fireflies that light up Northern Georgia’s summer nights, each species plays an important role in the web of life.
Mushrooms are nature’s recyclers. They help break down organic matter, return nutrients to the earth, improve soil health, and support countless organisms above and below the ground. By farming in harmony with nature, we’re helping create habitats that encourage biodiversity and strengthen our local ecosystem. We try to keep that in mind even when creating the packaging for our wonderful mushrooms.

Here in the beautiful mountains of Northern Georgia, we’re reminded every day that Mother Earth provides everything we need. That’s why we believe it’s our responsibility to give back—to farm thoughtfully, protect natural habitats, and leave the land better than we found it.🩵

Co-owner Howard Berk better known as “The mushroom man” believes that if you don’t like mushrooms, you simply haven’t found the right one yet…..
At Ellijay Mushrooms, one of our missions is to challenge the stereotypes mushrooms often receive. As Howie likes to say, it’s the “magic mushroom water” of North Georgia that helps make our mushrooms something truly special.
Whether you’re new to mushrooms or already a fan, our varieties offer a range of unique flavors and textures:

Lions Mane- Tender and meaty with a crab like texture making it a favorite among both mushroom lovers and skeptics.
Blue Oyster– Mild and savory with earthy, umami-rich flavors and a subtle anise-like aroma.
Shiitake – Our most popular variety, prized for its rich, smoky, woodsy flavor and deep umami character.

We’re confident that at least one of these incredible mushrooms will change the way you think about fungi—and maybe even tickle your taste buds in all the right ways.

If you’ve been looking for a way to get the kids off their screens and into the fresh mountain air, we’ve got you covered. Come wander the farm, learn where your food comes from, see mushrooms growing up close, ask all the mushroom questions you’ve ever had, and make some memories together. There’s something magical about watching kids discover the wonders of nature firsthand. 🍄✨

Even with the rain rolling in this week, it’s finally starting to feel like spring at Ellijay Mushrooms 🌧️🦋
We were lucky enough to spot what looks like a Great Spangled Fritillary butterfly enjoying our marigolds — one of those little reminders that warmer days are on the way. The flowers are waking up, the butterflies are visiting, and our u-pick blooms will be ready soon 💛🌼

This Memorial Day, we want to take a moment to honor and thank Mark for his service as a retired Navy veteran 🇺🇸🐝

Now, get to know the beekeeper behind the bees at Ellijay Mushrooms!
Mark started beekeeping 8 years ago in Jacksonville, Florida after always being fascinated by bees and nature. He decided to attend a local beekeeping meeting, found a mentor, and as he says — “the rest is history.”
A self-proclaimed “nature boy,” Mark loves foraging and being outdoors, which is one of the reasons he connected so strongly with Ellijay Mushrooms. What started as a hobby quickly became something he truly loved… and luckily, a hobby that paid for itself! 🍄🌿🐝
The bees you’ll find at Ellijay Mushrooms are Italian honey bees, known for being hardworking and gentle.
After retiring from the Navy, Mark transitioned into IT work at a credit union and now resides in Blairsville, GA. We’re grateful to have his passion, knowledge, and love for nature as part of the Ellijay Mushrooms family 💛
