Cajun Corn On The Cob 🌽
Ingredients :
4 ears of corn husked
2 tablespoon olive oil
salt and pepper to taste
4 tablespoon mayonnaise i used vegan mayo
⅓ cup sour cream or Mexican crema
1 ½ teaspoon cajun spice
1 ½ teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon cilantro chopped
½ cup feta or cotija crumbled
1 tablespoon lime juice
1 teaspoon chipotle or chili powder optional
Instructions :
Oil and spices. In a small bowl, whisk olive oil, half of the cajun spice, half of the paprika spice, garlic and onion powder, salt, pepper to taste.
It is fine if you have extra oil-spices mixture left, you can brush the corn later, right before brushing with the mayo sauce.Place each cob on a piece of foil. Brush each corn generously with the mixture. Wrap in foil.
Transfer the corn to the oven and bake for 30 minutes at 425 F. If you like the corn to be softer, remove it from the oven after 30 minutes, brush it with more oil-spice mixture and bake another 20-25 minutes.
While cajun corn on the cob is baking, prepare the mayo sauce. In a medium bowl, mix mayo, sour cream, leftover cajun and paprika, lime juice (or squeeze it later directly on the corn as needed), salt, and pepper to taste.
Take the corn out from the oven, let cool slightly and brush with leftover oil mixture (optional) and finally mayo mix all over the corn. (If you want to get the corn slightly charred without using a grill, a grill pan would be a great option here. Transfer the baked corn directly to a lightly greased grill pan and let all the sides grilled until the desired result, don’t overcook it though!).
Top with crumbled feta or cotija cheese, chopped cilantro, cajun spice. Serve warm

My Goodness! It’s been four months since we’ve posted….life is busy and the amount of work around here is unbelievable but here’s a little peak at some of the updates we’ve made. Changed out the wood burner in the kitchen and added one to the living room. Put up our rooster backsplash, trimmed the bathroom, sanded the floors (1st round), cleaned up the overgrowth on the barn, installed a new heater, and our cabinet hardware. We updated our family with a donkey and two new puppies and we most importantly we updated our vows!

Having a pretty eventful week. Lots of produced and eggs harvested! Began building a play area for the goats which Daisy girl absolutely loves. Baby boy Liam got his balls banded and he handled it like a champ. Lost a Guine Hen and 2 Easter Eggers (working on finding out what is coming into the property at night) 😢

Day 117: ( good lord, we haven’t posted in 30 whole day’s)

So let’s see what we missed. We got our boys and brought them home on Fathers Day Nico (black) and Bo (tan). The girls are doing great and the chickens should be just about old enough to lay eggs.

Babe removed the fallen down house on the property about two weeks ago. Finished digging stumps/trees and repaired more water lines. Ripped out another ceiling and started sheet rocking some of the rooms. Spent days peeling old wallpaper and found some cool writing on the walls from over the years. We started painting trim and deciding on colors for the interior doors. went with black solid doors and white for the French doors inside because removing the paint and having natural wood as planned is just too much right now but we did sand and re-stain the very old wood front doors.
