had starter ready at 9pm…took a tip from to prevent overproofing with an overnight counter bulk ferment!

9pm: fermentolyse
9:30pm: added salt, mixed for ~1 min
10pm: 1 S&F (dough temp 78) then placed bowl into another bowl full of ✨ice water✨
6:30: dough temp 71, dough was pretty slack, did a coil fold or two until it tightened up
11am: dough was puffy & jiggly. pre-shaped!
11:30am: final shape & place in banneton, counter proof
12:30pm: bake in DO 450, 20 min lid on, 20 lid off

French! Girl! Summer! Couldn’t have asked for a better first event than a ‘make your own butter’ event that hosted .winsome!!! I baked sourdough baguettes to accompany everyone’s personalized butter made from local cream .

Also baked French madeleines, scones, chocolate chip cookies, and original & cheddar jalapeño loaves.

What a frickin DREAM!!!!
