ct from furniture makers in Colorado Springs. To this, we add recycled coffee grounds from local coffee baristas who save their spent grounds for us. Lastly, we add proprietary ingredients which remain, of course, a secret. Our growing medium, then, is natural, recycled and locally derived. We even use well water to eliminate trace chlorine and other chemicals added by government authorities. You can trust our Shiitake – they’re pure and good. We’re a local farm that primarily grows shiitake mushrooms in the Colorado Springs area. Last month, we moved into larger facilities which we thought would double our production. Instead, our production quadrupled. With new larger equipment arriving next week in addition to our surprisingly successful and unique growing method, we’re about to ramp up production even more. Family Farm. Ours is a family farm. The patriarch of the farm, my grandfather Elwin, offers decades of corporate management experience. My mother, Kristen, a nerdy professor, does the research and development. My brother, Kenton, a computer geek, will be moving here in two months to help where he can.
