A few of my cheeses from last year haven’t been turning out the best..too much whey collecting in the bags and crystallizing….making for acidic cheese. I’ve thrown away 4 lb cheeses….Makes me start to wonder if all the work is worth it….
But I just opened a 14month old Colby and OH MY Goodness is it amazing! It’s so creamy and flavorful!

Rip leaves from stem, drizzle with olive oil, rub olive oil to cover leaves, sprinkle with sea salt, cook on low 225° to 250° for about 20 minutes or until crisp. A great way to get those healthy greens!😊
