French Onion Pork Chops 🧅🧀 A little cheesy, a little crispy, and full of comfort food goodness!

Ingredients:
• Thin pork chops
• Chopped russet potatoes
• Chopped carrots
• French onion dip
• Cheddar cheese
• Fried onions

Italian Penicillin Soup 🍲 Buttery, cheesy pastina, a cozy veggie-packed broth, and rotisserie chicken to make life a little easier. This is my kind of comfort food. 🤍

Ingredients:
• 1 rotisserie chicken, shredded
• 1 box pastina
• 4 celery stalks, chopped
• 5 carrots, chopped
• 1 yellow onion, chopped
• 1 sprig rosemary
• 1 sprig thyme
• About ½ tablespoon turmeric
• 2 boxes chicken stock
• 1 Parmesan rind
• ½ block Parmesan, grated
• 2 tablespoons butter
• Pinch of salt

Directions:

1. Add chicken stock, celery, carrots, onion, rosemary, thyme, turmeric, and Parmesan rind to a large pot. Simmer until the vegetables are tender.
2. Remove the Parmesan rind and herb stems, then blend the soup with an immersion blender until smooth.
3. Cook the pastina separately according to the package directions. Stir in the butter, a pinch of salt, and grated Parmesan.
4. Spoon the cheesy pastina into your bowl, ladle the soup over it, and top with shredded rotisserie chicken.
