We wanted to share a new recipe with you: Shokupan, or Japanese Milk Bread, now available on our website. Courtesy of our friends at Ethos Stone Mill, this soft, enriched bread uses the yudane method, where a portion of the flour is mixed with boiling water to create a simple paste. The result is a loaf that is incredibly tender, fluffy, and stays fresh longer.

This technique pairs beautifully with heritage grains. It calls for White Sonora for a subtle sweetness, as well as Turkey Red (or Amber Eden) for a robust flavor. Adapted with inspiration from our partners at Ethos Stone Mill, this dough is flexible enough for same-day baking or an overnight rest.

Whether you shape it into a sandwich loaf or soft dinner rolls, this recipe delivers a perfect balance of richness, softness, and whole grain character.
