Cheesy Herb Chicken & Potato Bake

Juicy herb-seasoned chicken thighs, golden baby potatoes, tender asparagus, and plenty of melted cheese come together in one easy pan. The garlic-herb butter adds rich flavor to every bite, making this a perfect family dinner.

Ingredients

6 boneless chicken thighs
700 g baby potatoes, halved
250 g asparagus, trimmed
2 tbsp olive oil
2 tbsp melted butter
4 garlic cloves, minced
1 tsp Italian seasoning
1 tsp dried parsley
½ tsp dried thyme
½ tsp paprika
¾ tsp salt
½ tsp black pepper
½ cup chicken broth
1 cup shredded mozzarella
½ cup grated Parmesan
2 tbsp fresh parsley, chopped

Instructions

1. Preheat the oven to 200°C. Lightly grease a 23 × 33 cm, or 9 × 13-inch, aluminum roasting pan. Set it on a sturdy baking sheet.
2. Wash and halve the baby potatoes. Trim the asparagus. Pat the chicken thighs dry with paper towels.
3. Boil the potatoes in salted water for 7 to 8 minutes. Drain well. Keep them slightly firm since they will finish cooking in the oven.
4. Mix the olive oil, melted butter, minced garlic, Italian seasoning, dried parsley, thyme, paprika, salt, and black pepper in a small bowl.
5. Arrange the chicken and potatoes in the roasting pan. Coat the potatoes with the garlic-herb mixture, then brush the chicken generously with the remaining mixture.
6. Pour the chicken broth around the edges of the pan. Avoid pouring it directly over the seasoned chicken.
7. Loosely cover the pan with foil. Bake for 20 minutes.
8. Remove the foil. Add the asparagus around the chicken and potatoes. Spoon some of the flavorful pan juices over everything.
9. Return the pan to the oven uncovered. Bake for another 12 to 15 minutes, until the potatoes are tender and the chicken reaches an internal temperature of 74°C.
10. Sprinkle the mozzarella and Parmesan evenly over the chicken and potatoes.
11. Bake for another 5 to 7 minutes, until the cheese is melted, bubbling, and lightly golden. For a deeper golden finish, broil for 1 to 2 minutes.
12. Rest for 5 minutes. Spoon the garlic-herb pan juices over the chicken and potatoes, then finish with fresh parsley.

Serve hot and enjoy.

🧀🥔 Creamy Potato & Camembert Gratin | Melty, golden, and seriously comforting 😍 Imagine layers of tender potatoes baked in a rich garlic cream sauce and topped with Camembert that melts into a gorgeous golden crust. This indulgent potato gratin is perfect for cozy family dinners, Sunday suppers, or alongside roasted meat. 🛒 Ingredients: • 2.2 lbs (1 kg) potatoes • 1 wheel (8.8 oz / 250 g) Camembert • 1¼ cups (300 ml) heavy cream • ⅔ cup (150 ml) whole milk • 2 garlic cloves • 1 small onion • 1½ tablespoons (20 g) butter • ½ teaspoon ground nutmeg • Salt, to taste • Freshly ground black pepper, to taste • 1 teaspoon fresh thyme, optional 👩‍🍳 Directions: 1️⃣ Preheat the oven to 350°F (180°C). 2️⃣ Peel the potatoes and cut them into thin slices, about ⅛ inch (3 mm) thick. Don’t rinse the slices—the natural starch helps make the sauce thick and creamy. 3️⃣ Generously butter a baking dish. Cut one garlic clove in half and rub it over the inside of the dish. 4️⃣ Thinly slice the onion and scatter some over the bottom. 5️⃣ Arrange the potatoes in overlapping layers, adding a little onion between each layer. 6️⃣ Combine the heavy cream, milk, remaining minced garlic, nutmeg, salt, and black pepper. Pour evenly over the potatoes. 7️⃣ Cut the Camembert into wedges or slices and arrange it generously over the top. You can leave the rind on for extra flavor. 8️⃣ Sprinkle with fresh thyme if desired, then cover the baking dish with foil. 9️⃣ Bake for 40 minutes. Remove the foil and bake for another 20–25 minutes, until the potatoes are fork-tender and the Camembert is melted, bubbling, and beautifully golden. 🔟 Let the gratin rest for 10 minutes before serving. This gives the creamy sauce time to thicken slightly. ⏰ Prep Time: 20 minutes | Cook Time: 60–65 minutes 🍽 Servings: 6
