We raise Angus and Charolais cattle on our small family ranch above Enterprise, Oregon with a view of the Seven Devils and irrigation water from the snow off Ruby Peak. That means plenty of space to wander and graze all year long. They get shelter in the winter and green pasture in the summer. They don’t get GMO feed or mRNA vaccines. We grain-finish with a local mix of barley, corn, and molasses

from Wallowa County Grain Growers that gives our beef its the tender, juicy flavor that our customers love. Each year we also raise a handful of Katahdin-Dorper hair sheep alongside our cattle. Just like our cows, our sheep get all the green grass they can eat, supplemented by local grain.

Hello! We’re Molly and Stefan. A few things to know about us:

👰‍♀️🤵‍♂️October 9-15, 2021, we got married, sold Molly’s house in Boise, and bought ~80 acres near Enterprise, Oregon. It was a busy week.

🐕 We have two cats, two Border Collie/Blue Heeler mix dogs, chickens, sheep, and cattle.

🌾 Molly is a seventh generation Oregonian. Both parents were raised on Century Farms, meaning her families have farmed the same ground for over 100 years.

👩‍🎓 Molly’s high school graduating class in Sherman County, Oregon had fewer students than her current chicken count.

⚕️Stefan’s parents worked in International Health, meaning he was raised around the world. He lived in Sudan and Indonesia before kindergarten. He lived in Missouri and Oregon as a youth, visiting his dad in a number of lesser developed Asian and African countries during school breaks.

📚Molly has a Bachelor of Accountancy from Boise State University (Go Broncos!). Stefan has a Bachelor of Political Science from Columbia University. He has a J.D. from Harvard Law School.

🇩🇪 We lived less than 50 miles from each other in Germany around 2010. Stefan was based there during his time in the Army. Molly was studying abroad. We met in Boise a decade later.

✈️ We’re avid travelers. We’ve been to over 50 countries combined. We also like hiking, skiing, playing tennis, cooking, and puzzles. We went to Colombia on our honeymoon and did a four day trek through the mountains to an ancient site known as Ciudad Perdida. We’ve hut to hut hiked in the Alps, an overnight stay on a Guatemalan volcano…

✨ Custom shares of beef are now open! If you’re looking for pastured beef that’s also fed grain, please send us a DM. Our steers and sheep live their whole lives on pasture, but that doesn’t mean sacrificing grain finish and flavor. ✨

December has been a busy month. We welcomed a breeding pair of Katahdin sheep named Franklin and Dot. Dot will welcome lambs in the spring. We’re hoping for ewes that we can add to our flock!

Our 2025 batch of steers have started feed that’s high energy to keep them happy and healthy through the winter.

Our chickens have slowed laying slightly, but we’re still able to get enough eggs for ourselves and a few family and friends. We’re lucky to have indoor spaces to keep them cozy but with plenty of room to roam.

Meanwhile Cowdog Charley and Cowcat Tom have been enjoying long naps by the fire.

Taking a break from holiday cookies and eggnog for brisket and butternut squash latkes! We cooked the brisket sous vide for 24 hours (thanks, for the recipe inspiration!), then finished in the oven for two hours. We used the meat drippings to make a simple, sugar-free BBQ sauce. The latkes are a recipe from and turned out perfectly. The onions and butternut squash are from local producers delivered by .shop. We loved this hearty, healthly meal!

A huge “thank you” to the for hosting a series on lamb butchering! The class started with a discussion and training on humane harvesting practices, then continued with hands-on training for best practices related to cutting and wrapping. While TFCC lamb is professionally cut and wrapped, this class helped us understand carcass quality, butcher cut sheets, and more!
