My wife got a message from a friend who made homemade blueberry biscuits last night and it got me wanting to try and make scones.

Figured I’d share the recipe, let me know if you have any questions.

Easy Buttermilk Biscuits
2 1/2 Cup Self Rising Flour
1 cup ice cold buttermilk
1 stick of frozen butter
2 Tablespoons Honey

Optional
1/4 tsp salt
1/4 to 1/2 tsp granulated sugar

Topping Idea
I added a Tablespoon or so of honey and a Tablespoon of Brown Sugar to 2 Tablespoons of melted butter and it was ridiculously good.

Mix Flour and optional ingredients and whisk

Grate the butter (the large holes are the perfect size) into the flour.

Mix the flour and butter until you have pea sized pieces.

Add Buttermilk and honey. Then gently mix until combined. (This is a very wet and soft batter)

Turn out on a floured surface. Gently bring dough together, flatten out and fold on top of itself 6-10 times or until you’re happy.

Roll out until you have an even thickness of 3/4 to 1 inch. Cut but don’t twist the cutter.

This made 8-9 biscuits.

So I have taken most of the year off due to my real life being absolutely insane! But I’m back and I’m making changes!

I want to keep posting my grub but shift focus to featuring y’all and all the great things your cooking. Post your food!! Share recipes or tips that you like and use! Let’s see what y’all got! And yes, Memes are welcome, I just ask keep them relatively family friendly.

How about the Big Bell cheesesteak on a homemade sub roll. NY strip dry brined for an hour then sliced thin! Couldn’t find cheese whiz today so opted for white American cheese. I did cook up onions, red peppers and mushrooms but the boys didn’t want any.

The bread was given a long six hour rise in the fridge then proofed another hour or so in a turned off oven. It fought me every step of the way but I ended up winning. Have a great weekend!

I thought I’ve cooked a few decent meals but this absolutely tops anything I’ve done before.

To start there’s a reverse seared pork chop that was marinated overnight then finished in a black iron skillet basted in butter.

The pasta is killer! It’s a three cheese tortellini baked pasta. Bacon, mushrooms, roasted garlic, chili flakes and heavy cream brought together then added the tortellini, Gouda and Parmesan cheese. Baked it until everything was perfectly browned.

Last but definitely not least are fresh green beans. Bacon, onion and garlic cooked down then threw in the beans until they were perfectly cooked.

Trying to catch up from this weekend. A breakfast casserole that combines the “Cracker Barrel” hash brown casserole with my own touches of eggs, heavy cream, sausage, bacon and a ton of cheese.
