🧡 Back-to-school mornings are almost here, and we're already dreaming of cozy breakfasts.
These Pumpkin Chocolate Chip Muffins are soft, perfectly spiced, freezer-friendly, and make the house smell like fall. Save this recipe for those busy school mornings (or honestly... any excuse to bake). 🍂
Pumpkin Chocolate Chip Muffins
Ingredients
• 1¾ cups all-purpose flour
• 1 tsp baking soda
• 2 tsp pumpkin pie spice
• ½ tsp cinnamon
• ¼ tsp salt
• 2 eggs
• 1 cup pumpkin purée
• ½ cup brown sugar
• ¼ cup granulated sugar
• ½ cup vegetable oil (or melted butter)
• 1 tsp vanilla extract
• ¾ cup chocolate chips (plus a few extra for the tops)
Directions
Preheat oven to 350°F and line a muffin tin with liners.
Whisk together the flour, baking soda, spices, and salt.
In a separate bowl, whisk the eggs, pumpkin, sugars, oil, and vanilla.
Fold the wet ingredients into the dry ingredients until just combined.
Stir in the chocolate chips.
Fill muffin cups about ¾ full and sprinkle a few extra chocolate chips on top.
Bake for 20–24 minutes, or until a toothpick comes out clean.
