Long Table Farm We are a family farm in Eugene, Oregon run by Max and Eva Edleson.

We are dedicated to cultivating local culture through the practice of agriculture, craft, the dissemination of seasonal recipes, and the art of bringing people together.

A wonderful weekend of preserving the harvest at Long Table Farm! 🥒🌿

A huge thank you to Faye from the Willamette Farm and Food Coalition for leading two fantastic hands-on workshops!

Saturday’s class was Foundations of Canning Pickles, learning the science and techniques behind safe water-bath canning and turning beautiful seasonal produce into crisp, flavorful pickles.

Sunday’s class was Foundations of Fermentation, learning how salt, time, and beneficial microbes naturally preserve food while making classic sauerkraut and fermented salsa.

Both classes also enjoyed a beautiful lunch prepared with fresh, seasonal ingredients from local farms. 🌱

These classes were part of WFFC’s Summer of FUNdraiser, supporting their Pantry Bucks program and helping make fresh, locally grown food more accessible in our community. 💚

Still dreaming about the flavors from our Thai Cooking Class at Long Table Farm. 🌿✨ A huge thank you to Lucky Thai Food Cart for sharing your recipes, techniques, and the heart behind authentic Thai cooking. If you’re looking for incredible Thai food in Eugene, be sure to stop by. You won’t be disappointed. 🇹🇭🍜💛

Together we made fresh Som Tam (green papaya salad), rich Salmon Panang Curry, and crispy Vegan Spring Rolls + a homemade plum sauce, then gathered around the table to enjoy mango sticky rice. It was such a fun afternoon of learning, cooking, and connecting over delicious food.

A beautiful day of learning, creating, and sharing food together with . Chef Claire and Kim were incredible teachers, making every step feel approachable and fun.

There is something so satisfying about learning to make food by hand—slowing down, creating together, and sharing a meal at the end. 💛

This weekend we gathered around the table for fruit tart baking classes taught by the wonderful Jamie Goodrich .biz — filled with flowers, fresh fruit, sunshine, baking in the wood-fired oven laughter, and multiple generations learning side by side.

Join us at Plants for the People for a workshop and live demo on Sunday, May 3rd

Spring Food & Herb Preservation: Dehydration + Freezing

Facilitated by Faye Sofranko of Willamette Farm & Food Coalition and a certified Master Food Preserver through OSU Extension.

Together, we’ll walk through the basics of dehydration and freezing—simple, accessible techniques to help you extend the life of seasonal abundance. We’ll highlight spring herbs and fresh foods, and share easy ways to start preserving at home.

Whether you’re brand new or looking to refresh your skills, this is a space to learn, ask questions, and build confidence in your kitchen.
