Have you ever wanted to make Florentine's at home? Try this recipe! If all else fails, we know a good bakery that makes them!!

Homemade Florentine Cookies

Ingredients
1 cup sugar
14 tablespoons (1¾ sticks) salted butter
3 tablespoons light corn syrup (or glucose syrup)
3 tablespoons honey
1 cup sliced, blanched almonds
Optional: candied cherries for garnish
Optional: 8 oz melted dark chocolate for coating the bottoms

Instructions
Prepare your workspace: Line a baking sheet with parchment paper or a silicone baking mat.
Make the syrup: In a medium saucepan, combine the sugar, butter, corn syrup, and honey. Bring to a gentle boil over medium heat, stirring often, until the mixture reaches about 230°F (110°C).
Add the almonds: Remove from heat and stir in the sliced almonds until evenly coated.
Spread the mixture: Pour the almond mixture onto your prepared baking sheet and spread it out into an even layer (about ¼–½ inch thick).
Chill and cut: Let it cool until firm enough to handle, then transfer to the fridge to chill completely. Once firm, cut into cookie-sized pieces (or use a round cutter).
Bake: Preheat your oven to 320°F (160°C). Place the pieces on a parchment-lined tray and bake for about 15 minutes, until golden brown.
Decorate and finish: Cool completely. Dip or spread the bottoms with melted dark chocolate and top with a small piece of candied cherry if desired.
Tip: These cookies keep beautifully in an airtight container and make elegant holiday treats.
