The holidays keep coming fast. We're still restocking from Father's Day, and now the 4th is right around the corner.

If you're planning a special meal, please place your orders as soon as possible. Anything ordered by Sunday, June 28 should be possible. After that, we'll do our best, but availability becomes less certain.

We're also doing something we've never done before: Homestead Meats will be OPEN on Saturday, July 4 until 2 p.m. to help with those last-minute holiday needs.

From Ehran: "For a long time, I have wanted to write about that “manly” steak. The one that looks great in photos, inspires a sense of primal adventure, and, yes, also tastes great: the Tomahawk steak.

My own theory is that the Tomahawk was originally marketed by those big American steakhouses, places built around decadence, excess, and showmanship.

It is also a clever money-making practice.

Now, let’s examine it more closely. A Tomahawk, around 2½–3 inches thick, is basically a very large ribeye. But here’s the rub: that long bone it sits on is, well, a bone. In an average ribeye of any thickness, the bone may account for around 7% of the steak. In the Tomahawk, the bone can be 20% or more. And you are now paying a hefty ribeye price for that bone.

I try to be an ethical cook and butcher. That's why I usually respond with a friendly counterproposal when customers ask for a Tomahawk.

“Get a nice thick ribeye,” I suggest. Or sometimes I will recommend what I call an Elegant Tomahawk, with a little extra bone but not the full Tomahawk treatment.

Having said that, there is one occasion every year when I set my ethics aside and keep my mouth shut on the topic. That day is Father’s Day.

It's that testosterone-laden holiday of big steaks on the grill, the Tomahawk among them. Maybe that's how some guys feel most comfortable giving and receiving love. Who am I to interfere?

Whatever it is, get your Father’s Day meat plans to us this week if you can. Being a dad is one of the great sources of happiness in my life. I hope you feel the same.

If you've been waiting for our Gluten-Free Meatloaf or the new Spring Chicken Sausage, here's a quick update: the gluten-free panko we use for both products has mysteriously disappeared from our suppliers. We're actively working on a new source and hope to have the issue resolved soon.

There’s one downside to being a stop on The Main-Dempster Mile's Evanston Craft & Beverage Crawl: we can’t do the crawl ourselves!

Looking at this map and hearing about all the enticing beverage pours, art showings, and creative energy around the neighborhood, we’re honestly a little envious. Evanston really shines during events like this, with people wandering from shop to shop, discovering something new around every corner.

Meat School for Grown-Ups is back at Homestead Meats.

One of the most enjoyable parts of what we do is hosting private classes and demos for groups of 8–16 people. Topics include butchering, sausage making, and cooking, with charcuterie tastings throughout the event. It ends up feeling less like a class and more like a laid-back dinner party.

These gatherings have become a favorite for birthdays, anniversaries, graduations, bachelor/bachelorette parties, and anyone looking for something more memorable than a typical night out.

Back in December, we brought in a Mangalitsa/Berkshire cross from Prærieeker Farm and held back a few bellies to cure. With time, that rich fat developed into something special.

Now it’s ready. This pancetta shows off that Mangalitsa richness, with soft, generous fat and deep savory flavor. Dice it into lardons for cooking, or slice it thin for a charcuterie board where it leans toward lardo, with a delicate melt-away texture.
