For a long time, beef fat got a bad name. Like many animal fats, it was pushed aside as vegetable and seed oils became the preferred choice for many Americans who thought they were the healthier option. But lately, as people have begun questioning the reliance on highly refined oils, traditional cooking fats are getting another look.

This week, we’re bringing in Talo, produced by two brothers here in the Chicago area. It is rendered grass-fed beef fat, or tallow: an old and simple cooking fat that is wonderful for frying and roasting. Use it for potatoes, vegetables, eggs, or anywhere you want a rich, savory cooking fat that can handle very high heat.

It's great to see this old and very useful ingredient back in kitchens.

"Last week I realized that summer is almost over, and I have not made beef terrine yet. Along with the pork terrine, it is part of my summer charcuterie collection. The funny thing is that no one would really notice if I didn’t make it, and yet I find myself compelled to.

I often observe myself in a creative state and wonder where this need comes from. This beef terrine, like all our other specialties, takes a few days to make. Cooking the meats, making stock, clarifying it into a consommé, turning that into aspic, and other processes we don't necessarily need to get deeper into.

And to tell you the truth, all said and done, it is not a very profitable product. But I apparently don't care. I guess it is the same as when one wants to paint or dance or play music. It's about the experience of discovery, creativity, and then the pleasure of sharing it with others.

I would like to invite you this week to look at our meats and charcuterie products with a fresh set of eyes. Discover new things you may not have tried yet and open yourself to new experiences.

I would love to hear from those of you who tried something new. Whether you liked it or not, share your experience with me!"

Most people never see what happens before the meat arrives at the butcher shop.

Yesterday we spent the day at Kilgus Farmstead where our friend Justin Kilgus walked us through the countless little decisions that shape the quality of the beef we bring into our shop. Some of what stood out had nothing to do with genetics or equipment. It was about simple, thoughtful practices that most people would never think about, but that make a real difference.

Every visit reminds us that great meat isn't an accident. It's the result of people who care deeply about doing things the right way, every single day.

Happy Bastille Day, Evanston. Or as the French would say, bonne fête!

This is our idea of a perfect summer afternoon: some charcuterie, a fresh baguette, a cold glass of rosé, and a spot outside to enjoy it. Nothing fancy, just good things from good makers.

One of our favorite French traditions is building a meal one shop at a time. A baguette from Fred's Bread Evanston. A macaron at Patisserie Coralie. Your main course here with us: sausages, or a few good cuts for the grill. Charcuterie and a cheese or two to begin the table. A bottle from The Wine Goddess, chosen with their help. "One of the unexpected things about opening the shop is the community that forms around it.

Customers strike up conversations with each other while waiting at the counter. Sometimes we introduce people because we know they have something in common. Maybe they come from the same place, do similar work, love the same foods, or share some other connection.

Sometimes people bring us treats, which always touches me. Sometimes those treats end up being shared with other customers who happen to be in the shop.

These moments are never organized. You don’t need an invitation. You just walk in, and sometimes something human happens.

Yes, we are here to cut meat, make sausages, and help you figure out dinner and holiday meals. But over time, Homestead has also become a place where people meet, talk, share, and become part of each other’s lives.

That part of the work was completely unexpected. And it means the most to me."
