Cashew Chicken - Mindful Meals Style ππΆπ₯’

This cozy favorite is sweet, savory, and packed with bold flavor - made a little more mindful with coconut sugar and light soy sauce for that rich, glossy finish β¨οΈ
Ingredients:
β’ 1.3 lb boneless, skinless chicken thighs, diced
β’ 1 tsp white pepper
β’ 3 tbsp light soy sauce

cup plain flour
β’ Β½ cup vegetable oil, for frying
β’ 7 oz unsalted cashews
β’ 2 medium white onions, quartered and separated
β’ 2 medium bell peppers (1 red, 1 green), diced
β’ 8 ounce green beans (chopped in 3 inch pieces)
β’ 4 cloves garlic, finely chopped
β’ 2 red chilies, sliced (optional for heat)
β’ 3 spring onions, whites and greens separated
β’ 1Β½ tbsp coconut sugar
β’ 3 tbsp oyster sauce
β’ Cooked rice, for serving
Quick Method:
1οΈβ£ Toss chicken with white pepper and soy sauce, then coat lightly in flour.
