This week we’re heading to the Caribbean. Bold island spices, smoke, and slow braises with a lot of these proteins hitting the smoker and finishing on the Blackstone.

Entrées:
Jerk Chicken
Chicken marinated in a traditional jerk spice blend, smoked low and finished hot for a deep char and bold Caribbean flavor.
Served with coconut rice & peas and fried plantains.
Brown Stew Chicken
Chicken braised in a rich island-style gravy with peppers, onions, garlic, and thyme until tender and savory.
Served with steamed white rice and braised cabbage.
Jerk Pork
Pork rubbed with jerk seasoning, slow-smoked and finished on the flat top for a smoky crust and caramelized edges.
Served with roasted sweet potatoes and citrus slaw.
Curry Chicken
Caribbean-style curry simmered with warm spices, garlic, and herbs for a rich, comforting dish with just the right amount of heat.
Served with steamed white rice and garlic green beans.
Braised Oxtail
Oxtail slow-cooked until fall-apart tender in a deeply savory braising sauce with classic island aromatics.
Served with coconut rice & peas and braised cabbage.

Mini Island Meat Patties – flaky turmeric pastry filled with seasoned beef and pork, baked until golden.
