What I actually ate for dinner this week as a gluten-free personal chef.

Not every meal was fancy.
Not every dinner was perfectly planned.
But honestly? These all slapped.

• Sun-Dried Tomato Pesto Pasta + Roasted Carrots + Garlic Herb Bread — 10/10

I thought being “healthy” meant doing more.

More meal prep.
More rules.
More complicated recipes.

Turns out? The biggest changes to my health came from a few really small kitchen habits.

As a gluten-free personal chef, these are the habits that actually changed everything for me:
• protein first
• realistic meal prep
• drinking more water
• simplifying meals instead of overcomplicating them

Nothing extreme. Nothing trendy. Just habits that made me feel better, more energized, and honestly less stressed around food.

Because healthy eating gets a whole lot easier when you stop trying to do it perfectly.

These crispy gluten-free chicken cutlets have become one of those recipes I make once… and suddenly use all week long.

On salads.
With roasted vegetables.
Over pasta with pesto.
Straight from the fridge while deciding what to make for dinner. Very versatile.

Golden, crispy, simple, and honestly the kind of meal everyone gets excited about.

And yes — the air fryer leftovers might be even better the next day.

People think being a personal chef is all beautifully plated meals and aesthetic grocery shopping.

Reality?
It’s also:
• washing 47 sheet pans
• forgetting to eat lunch while cooking all day
• staring into my own fridge wondering what’s for dinner
• and learning that most people just want meals that feel familiar and comforting

And honestly? I get it.

Because food is emotional. It’s routine, comfort, memories, busy weeknights, celebrations, and sometimes just surviving the day.

The truth is — I don’t love this job because of the fancy parts.

I love creating recipes people actually look forward to eating.
I love feeding families during important seasons of life.
I love bringing joy to the table in a real-life kind of way.
