Livingston Enterprises, Inc. is one of the largest, family-owned pork producers in Nebraska. We have and LEI Mills, LLC.
We have been in the swine production business for more than 40 years and have been incorporated since 2001. Our corporate headquarters are located in Fairbury, Nebraska with all of our swine production facilities in the surrounding areas. LEI is comprised of our swine production facilities, Livingston Enterprises Transport, Inc. All aspects of LEI are essential in providing sustainable pork to the
world! Out of our various swine production facilities, we have five sow farms with 36,000 sows that produce over 1.2 million weaned pigs on a yearly basis. LEI has over 200 team members, several of these key members have been with LEI for over 25 years. We are continuously growing and expanding at LEI. With the new additions coming, we are always looking for new team members to join our team.

Our 4th recipe for Porktober is Pork Carnitas.
The recipe is as follows:
4 pound Pork shoulder roast
1 cup orange juice
1/2 cup lime juice
1 tablespoon of cumin
1 tablespoon of oregano
5 cloves of garlic
1 medium sized onion sliced
Place shoulder roast in a crock pot and add juices over the meat. Then add onion and garlic, sprinkle on seasonings.
Cook on low for 7-8 hours. Shred and Enjoy!
Our family enjoys this with taco toppings.

Our 3rd recipe for Porktober is No Peek Pork Chops and Rice Casserole.
This one is great to make ahead of time and then pull out to bake an hour to two before supper.
The recipe is as follows:
8 boneless pork chops
pepper for seasoning
1 can of cream of chicken
1 can of cream of mushroom
2 cups of beef or chicken broth
1 to 1 1/2 cups rice uncooked
1 packet dry onion soup mix
Preheat oven to 350 degrees. Season the pork chops with pepper and then combine all other ingredients in bottom of pan. Lay the seasoned pork chops on top and cover with foil. Bake 1 - 1.5 hours. Enjoy!
**If you made this ahead of time and has been in the fridge you will need to bake about 30 minutes longer than what the recipe calls for.

Our 2nd recipe for Porktober is a spin on Salisbury Steak using pork burger.
Recipe is as follows:
Meat ingredients:
1 1/2 pounds of ground pork
1/2 cup of breadcrumbs
2 tablespoons milk
2 teaspoons dry mustard
1 beef boulin cube crushed
4 dashes of worchestershire sauce
1 tablespoon ketchup
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon of each olive oil and butter
Gravy ingredients:
1/2 onion sliced thinly
2 1/4 cups beef broth
4 dashes worchestershire sauce
1 tablespoon ketchup
2 tablespoons of cornstarch
salt and pepper to taste
Combine meat ingredients in a bowl and mix very well. Form this mixture into about 6 patties and cook in the olive oil and butter until they form a nice crust on each side (usually 3-4 minutes per side). Remove patties and place on a plate. Add the onion and sauté for several minutes until golden, then add 2 cups of broth, worchestershire, and ketchup. Stir and cook for a couple minutes to slightly reduce liquid. Next, mix cornstarch and remaining 1/4 cup of broth together in a small bowl. Slowly stir cornstarch mixture into the gravy and it will thicken. Taste and add salt and pepper as needed. Finally, put cooked steaks back in the gravy and let simmer a couple minutes.
Serve and Enjoy!!

Our 1st recipe of Porktober is Fusilli Pasta with bacon and sausage.
The recipe is as follows:
Ingredients
1 medium butternut squash, peeled and diced
12 ounces of Fussili pasta
1 pound ground Italian sausage
5 strips of bacon
2 cups of fresh spinach
1 onion finely chopped
3 cloves of garlic minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
olive oil
salt and pepper to taste
Directions:
1. Roast butternut squash for 30 minutes at 400 degrees, drizzle with olive oil, salt and pepper.
2. Cook Pasta, drain and set aside
3. Cook bacon - drain, chop, set aside
4. Cook sausage, leave some drippings in the pan
5. Add onion, garlic, and chopped bacon to sausage
6. Pour in chicken broth, heavy cream and add cubed butternut squash
7. Toss in pasta and add fresh spinach
8. Sprinkle with grated parmesan cheese, salt and pepper
9. Stir to combine and let simmer for 15 minutes
Serve and Enjoy!

Yesterday, LEI had the pleasure of hosting Wesley Koss as a high school job shadow student. Welsey has an interest in graphic design, so while spending time with our IT department he also visited the variety of different positions LEI has to offer. He also created an Easter Flyer for our Marketing team to use. We enjoyed having Wesley visit and appreciated the flyer he created.

Livingston Enterprises, Inc. is owned by Bruce and Trudy Livingston. Bruce has been providing quality swine production for over 40 years and LEI has been incorporated since 2001. LEI is one of the largest, family-owned pork producers in Nebraska. Bruce started with six gilts at the age of eight and with hard work and determination has grown LEI to 35,000 sows.
He earned three of the gilts by trading labor working for his dad and uncles. Two gilts were purchased with earnings from a 4-H swine project and one gilt was won by placing first at a swine judging contest.
In 1987, Bruce graduated high school and at that time owned and operated a 150 sow farrow to finish operation. In 1996, he stopped producing finishing hogs and transitioned his operation into a 2,200 sow breed to wean facility.
To this day, Bruce now has five sow farms and will produce over 1,000,000 weaned pigs on a yearly basis. LEI primarily sells their pigs to customers in Iowa.
Fairbury, Nebraska has been home to our LEI offices since August 2007. In June 2011, we bought and renovated a building downtown to be our corporate headquarters. With LEI’s continuous growth, we relocated our corporate headquarters to 1501 K Street in January 2019. Our two latest locations both have living quarters for trainees and other team members from numerous countries around the world.
LEI has over 200 team members, several of these key members have been with LEI for over 25 years. We are continuously growing and expanding at LEI. With the new additions coming, we are always looking for new team members to join our team.
