Hello All:

Wow, have things changed since I last sent out an ICE Meats Update! I’ve been waiting to finalize our California orders before informing everyone of our current appointment situation. We are planning to send approximately 30 whole processed beeves and 25 whole processed pork to California in April. We did have a few local orders that filled up the remaining beef and pork appointments we had for March.

Our May beef and June hog appointments are starting to fill. Please let us know as soon as convenient if you are wanting a beef and/or pork slaughter date. The bad news: We have raised our prices. The beef is now $4.50/lb. hanging weight and the pork is $3.50/lb. hanging weight.

Though our price increases reflect our increased costs, our percentage of increase is not nearly as much so as meat at the retail counter in grocery stores. From what I read in news articles, meat prices have increased well over 40% in the last year and there is no end in sight (we have increased beef 28% and pork 17%). Tyson raised their beef prices 31%...just in the last quarter of 2021! We may have to raise prices again but are planning to keep them at these levels for 2022. We haven’t raised prices for many years but feel current conditions necessitate it. Please remember: We don’t market ICE Meats as a bargain product. We market ICE Meats as a premium product you can get straight from the farm and be assured of top-of-the line meat at a reasonable price. If you go to a grocery store and buy exactly the same cuts, in exactly the same amounts as what you will get from a quarter, half, or whole from us, it might be cheaper…but you will get what you pay for. Most of our customers refuse to buy meat from a grocery store anymore. Many of our customers have told me that when they have guests over they buy grocery store meat so they can save the ICE Meat for themselves! Anyway, we understand that cost is a significant factor for food consumers. If we lose business because of the price increases, we understand, with zero contempt for anyone. Everyone must navigate these trying times in the best way they know how.

We thank you so much for your support over the years. Our goal has been, is and always will be to produce the best meat you can buy. We are truly a family farm, with our family and two hired men and their families working diligently to produce food and feedstuffs for other animals. We won’t feed the world, but are thankful for the piece of it God has entrusted to us. Eat well!

ICE Meats Update

Hello All!

Exciting news! (Well, for us anyway.) We are pleased to announce our new website: ICEMEATS.COM. You will be able to use this site to learn about and order our products. We know we don’t yet have anywhere close to all of the questions about the process answered on the site, but we aim to improve. Please, if you have any questions, contact us via email or phone and we will do our best to answer questions.

We are using the name Ichthys Premium Meats and I describe the reason for that on the website. In brief, we believe we are producing the best meat products in the world for beef, pork and lamb. I recognize the bias in that statement and realize it is only an opinion, but we haven’t tasted anything better. We also get numerous compliments from our customers who affirm the same thing. The true value in our products is not that you get a lower price than in a grocery store but that you get a far superior product for only a bit of a premium compared to a grocery store. We offer REAL…EXCELLENT…MEAT!!!

We have appointments! I have known for years that in order for our meat business to be a success we had to offer a premium product at a reasonable price…and have customers to enjoy it. Covid taught us that we need one more thing: We must have appointments at our local butcher. Though 2020 was our record year of sales for meat we could have sold much more if we had appointments booked at our local locker. Just a few weeks ago I finished booking our appointments…for 2022! If you have tried to get an appointment, you know that lockers are booked at least a year in advance.

Our appointments are already filling up for the 2021 slaughter. We have 26 whole beeves and 20 pork booked in February and March. We have a few beef appointments available in March, some lamb available in March and are booked up with pork until June. Please let us know if you would like to book as soon as convenient.

Another thing we’ve known for some time: Our customers are our best salespeople! If any of you at any time would like to get some samples from us to give to family or friends, we would be delighted to try to make that work. Most people are thrilled with our ground beef, pork (sausage) and lamb, and we offer these as samples. Kristin has a recipe for ground lamb that is the hit of every household that has tried it. We use the pork sausage on pizza or in breakfast burritos, but it could be made into patties, too. The ground beef has unlimited potential. We suggest people try these products next to store bought products and notice the difference. Once store bought products are cooked, they typically vanish because of the fat and/or water content added during processing. Our products have very little shrinkage, and the taste is superior.
