Crispy smashed fingerling potatoes meet the bold kick of Telios Horseradish Scallion Dip in this stunning dish! Topped with chopped beets, fresh arugula, and a drizzle of balsamic glaze, it’s the perfect balance of creamy, zesty, and savory goodness.

✨ Recipe: Smashed Fingerlings with Telios Horseradish Scallion Dip ✨

🛒 Ingredients:

✔ 1 lb fingerling potatoes

✔ 2 tbsp olive oil

✔ ½ cup Telios Horseradish Scallion Dip

✔ ½ cup chopped pre-cooked beets

✔ 1 handful fresh arugula

✔ 1 tbsp balsamic glaze

✔ Salt & pepper to taste

👩‍🍳 Instructions:

Boil fingerling potatoes until fork-tender, then drain.

Smash each potato with a fork and roast at 425°F with olive oil until crispy (~20 min).

Top crispy potatoes with Telios Horseradish Scallion Dip, chopped beets, and arugula.

Drizzle with balsamic glaze and season with salt & pepper.

Serve immediately and enjoy this vibrant, flavor-packed dish!
