It’s frustrating, messy, and honestly, a bit heartbreaking when your hard work doesn’t rise to the occasion.

But here’s the thing about baking: the most beautiful loaves often come after a dozen flat ones. A collapsed soufflé isn’t a sign that you aren’t a baker; it’s just a sign that the oven was too cold, the timing was off, or the chemistry needed a little more care.
