The University of Minnesota Meat Science Laboratory is a modern meat processing facility capable of The current meat laboratory, located on the St.

The University of Minnesota is home to the first university meat laboratory in the United States, founded in 1901 by Andrew Boss. Paul campus, is home to meat science research, teaching and extension. Additionally, we welcome all in the community to visit our salesroom to purchase a wide variety of fresh and processed meat products.

This past weekend, our Meat Lab Manager had the privilege of serving as a judge at the American Cured Meat Championships in Milwaukee, Wisconsin!

She evaluated entries in the Andouille Sausage and Semi-Dried Sausage categories alongside industry professionals from across the country. Judging these products requires careful evaluation of appearance, aroma, texture, flavor, and overall quality, and it's always an honor to help recognize the outstanding craftsmanship of meat processors nationwide.

Opportunities like this allow us to stay connected with industry trends, uphold the highest standards of meat quality, and bring valuable knowledge back to the University of Minnesota Meat Lab.

Thank you to the American Association of Meat Processors for the opportunity - we're proud to represent the University of Minnesota on the national stage!
