🦞🔥 Voodoo Crawfish Balls

These crispy crawfish balls are loaded with tender crawfish, colorful peppers, melted mozzarella, and bold Cajun seasoning.

🛒 Ingredients:

For the Crawfish Filling

* 1 lb cooked crawfish tails, drained and chopped
* ¼ cup red onion, finely chopped
* ¼ cup red bell pepper, finely chopped
* ¼ cup yellow bell pepper, finely chopped
* ¼ cup orange bell pepper, finely chopped
* 2 garlic cloves, minced
* 1 green onion, finely sliced
* 1 cup shredded mozzarella cheese
* 4 oz cream cheese, softened
* 1 large egg
* ½ cup plain bread crumbs
* 2 tbsp chopped parsley
* 1 tbsp Cajun or Creole seasoning
* 1 tsp garlic powder
* 1 tsp onion powder
* ½ tsp smoked paprika
* Pinch of cayenne pepper

For the Crunchy Coating

* 1 large bag voodoo-style potato chips, finely crushed
* ½ cup all-purpose flour
* 2 large eggs, beaten

For Frying

* Vegetable oil

For Serving

* Ranch dressing
* Remoulade sauce
* Spicy mayonnaise

👩‍🍳 Directions:

1. Pat the crawfish tails dry and chop them into small pieces.

2. Add the crawfish, onion, bell peppers, garlic, green onion, mozzarella, cream cheese, egg, bread crumbs, and parsley to a large bowl.

3. Season with Cajun seasoning, garlic powder, onion powder, smoked paprika, and cayenne pepper.

4. Mix until everything is evenly combined. Cover and refrigerate for 20–30 minutes.

5. Scoop out the mixture and roll it into small, firm balls.

6. Place the flour, beaten eggs, and crushed chips into three separate bowls.

7. Coat each crawfish ball lightly in flour, dip it into the beaten eggs, then roll it in the crushed chips until completely covered.

8. Place the coated balls on a tray and refrigerate for another 15 minutes to help the coating set.

9. Heat the vegetable oil to 350°F.

10. Fry the crawfish balls in small batches for 2–3 minutes, turning occasionally, until crispy and golden brown.

11. Remove them from the oil and drain on a wire rack or paper towel-lined plate.

12. Serve hot with ranch, remoulade, or spicy mayonnaise.

💡 Pro Tip: Drain and dry the crawfish thoroughly before mixing. Too much moisture can make the balls soft and cause them to break apart while frying.

I threw everything into the slow cooker before lunch. By dinner the chicken was falling apart, the stuffing was perfect, and nobody believed it took me five minutes to make.❤️

CROCKPOT CHICKEN & STUFFING 🍗

- Chicken breasts (4)
- Stuffing mix (6 oz)
- Cream of chicken soup (10.5 oz)
- Chicken broth (1 cup)
- Sour cream (½ cup)
- Salt & black pepper

Place the chicken in the slow cooker.
Mix the soup, broth, and sour cream.
Pour over the chicken.
Top with stuffing mix.
Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.

Tender chicken, creamy sauce, and buttery stuffing all in one pot.

My Son Was Bullied Throughout School — They Didn’t Even Invite Him To The 10-Year Reunion.
My son never had an easy time in school.
While other kids were getting invited to birthday parties, sleepovers, and weekend hangouts, he was usually sitting alone. Nobody wanted him on their team. Nobody saved him a seat at lunch. And whenever group projects came around, he was always the last one chosen.
As the years passed, things only got worse.
The other students laughed at him, played cruel pranks on him, and treated him like he didn't belong. More than once, he came home pretending everything was fine, but a mother always knows when her child is hurting.
The hardest part was watching him try so hard to be accepted.
No matter how kind he was, no matter how much effort he made, they always seemed to find a new reason to exclude him.
Then graduation came.
And thankfully, life moved on.
Ten years passed.
My son built a life for himself, and although he rarely talked about high school anymore, I knew some wounds never fully healed.
A few weeks ago, he discovered something that broke my heart all over again.
His entire graduating class had organized a ten-year reunion.
Everyone had been invited.
Everyone except him.
