Gerk's Brew Pub Homebrewing Emporium Gerk's Brew Pub is a private brew house (aka my garage) run by Steve & Tracy Gehrke. We like to experiment with new brews.

Really anything that strikes our fancy on brew day. To all our friends, if we post that we are brewing, consider it an open invitation to join us for a brew or two.

It’s coming up to the new year, and this is usually the time of year when we all pledge to make a new year’s resolution, or have various newspapers and magazine dietitians wave their fingers and admonish us about the numerous dangers to our health. Fairly sensible when you’ve probably been overdoing...

Easter is over, and Memorial Day is still several weeks off, so why not celebrate the beverage that makes everyone more attractive?

Brewing today - Gerk's "Wil Wheaton's Devils Gate Vandal Eyes PA"!

5 gallon boil
Steep 8 0z Belgian CaraMunich, remove grains at 170 degrees
Bring to boil
Add 6 lbs Golden malt syrup, 5 oz Priming sugar
Return to boil
Add 1 oz Chinook hops at 60 minutes
Add 3,15 lbs Golden malt syrup, 2 oz Centenial hops at 15 minutes
Add 1 oz Cascade hops at 10 min
Cool the wort and pitch 2x Wyeast 1056 American Ale

1-2 weks primary fermenter
2-4 weeks secondary fermenter
Dry hop 1-2 weeks before kegging with:
2oz Cascade hops and 1 oz Centenial hops

Pasty White IPA (aka Northern Brewer Permafrost White IPA)

Steep .75 lb unmalted wheat, .75 lb flaked oats to 170 degrees
Bring to boil
Add 6 lbs Wheat Malt Syrup
Return to boil5 oz Summit hops @ 60 min 5 oz Centennial hops @ 30 min
1 oz Amarillo hops @ 20 min
1 oz Centennial hops & 3.15 lbs Gold Malt @ 15 min
1 oz Amarillo hops @ 10 min5 oz Centennial hops 5 min

1 oz Galaxy hops 1-2 weeks before kegging
