Amaranth are one of the more sensitive types microgreens. Dampen off, mold and a handful of other issues are very common and can wipe out a whole tray in a matter of days. So what’s the trick? Like most great foods it’s simple. Sanitation. From the sowing of the seed, to the delivery itself every precaution must be taken in advance to ensure you grow a healthy, vibrant, nutrient packed micro. It is literally impossible to grow them without having a clean workspace. Their being, is a testament to the care that taken.

The most amazing thing about microgreens is that nature gives them everything they need to flourish minus one thing….light! This kholrabi has been moved from their four days of blackout and are now in the “sun”. Within minutes the plants respond to the last element of photosynthesis. And what an amazing change to see in just half a day!
