But did you know coffee actually needs a little time to rest after roasting?

After roasting, coffee releases carbon dioxide through a process called degassing. Giving your coffee time to rest allows those gases to escape and the flavors to fully develop.

For most coffee, the sweet spot is typically 1–2 weeks after roasting. So while that fresh bag smells incredible, your best cup may be waiting for you a few days later. 🤎

Fresh is good. Freshly rested is even better.
