As a chef at heart and as a graduate of The Culinary Institute of America, Hyde Park, NY, I have always been compelled to create. I have always been compelled to farm as well, even though I grew up in Staten Island, New York, as a first generation Irish American. My rural farming heritage in Ireland goes back too many generations to count. I am proud to now be a local farmer and artisan pickle producer here in Fayetteville, Arkansas, preserving the tastes of the Old World.
