I found this in my "memories" and it reminded me... You don't have to cut the fat up before rendering!

Every tutorial I see tells you to dice it up first. Do you know how long it would have taken me (and how bad it would've hurt my hands) to cut all of this up?! If you ARE going to just throw it all in like this, you do have to add water or you'll burn the stuff on the bottom before the stuff on top even gets warm.

Fill the pot enough that the water won't go over the edge once it starts simmering. You can put a lid on until it starts simmering, but leave it off for the rest.

Start poking every once in a while to rotate the chunks around until they start getting really soft. Break the chunks now and then with whatever spoon you're using and just continue to gently simmer for hours.

The water will all simmer off by the time it's done. You'll know it's done when all that's left of the fat is small translucent pieces that have started to turn golden brown.

I can also tell you how to "clean" it once you've strained it through several layers of cheesecloth, but this already got way longer than I intended. 🥴
