Chef Devon is cooking up a vegan version of a Spanish classic, Paella. Our friends from Fungi Fresh grew us a gorgeous mix of Blue Oyster, Chestnut, Pioppino, and Lion's Mane mushrooms for him to feature in this delicious dish. A mini cast iron skillet filled with saffron scented Bomba Valencia rice cooked with classic sofrito in a rich housemade vegetable stock combined with a fabulous blend of locally-sourced paprika roasted mushrooms, Spring peas, and fresh parsley. Served with a classic Pan con Tomate. Get it while it's hot!
