Brian and Kelsey Amann’s passion for home brewing started three years ago after attending a home brewers event hosted by the Ottertail County Historical Society and from that our first batch was made, many gallons were to follow. He loves to learn and teach so brewing was a perfect opportunity for that. For Brian, cleanliness is the most important part
of brewing. That is what is going to prevent contamination and off flavors. No one wants to waste a batch of beer they put so much time and energy into. Kelsey is his loyal helper, most of the time… For her it was all about trying new beers and sharing what they made with everyone. Brewing is a labor of love best shared with the people you love. So how did we get started on Kombucha? Once upon a time, there was a good sale on it, and after a short time the sale was over and we found ourselves craving it. Not too long after a close relative, who shared our love for all things brewing, brought us our very own SCOBY and the fermenting ensued. Starting with a gallon of simple basic black tea we were hooked, it was better then what we were buying, and the best part was that we could customize it however we wanted. We could switch up the teas, add flavoring, and add our own fruit. For the most part they were all good, minus one batch of choke cherry that over fermented and ended up on the ceiling (although it tasted fantastic). We tweaked our recipes to perfect the taste and shared with anyone who wanted to try it, we even gave away a few SCOBYs. We wanted to share its health benefits! For Brian, it was helping with acid reflux, and for Kelsey it was giving a tired new mom some much need energy and alternative beverage to the beer she loved so much. Soon, they realized how much people were enjoying it, and wanted to share! With Brian as an engineer and entrepreneur at heart and Kelsey, a marketer with a love for creating delicious beverages, they wanted in the market. The farmers market that is! So here we are ready to share our Kombucha with YOU, one bottle at a time, as we build our Empire! ABOUT KOMBUCHA
What is it? Kombucha is made by combining sugar, water, and a gelatinous mass of symbiotic bacteria and yeasts (SCOBY) grown to produce a fermented beverage held to confer health benefits. It is a refreshing effervescent, mildly sweet, and deliciously tangy beverage. It has been around for a few thousand years and its official origination is unknown. What are it its benefits? Very little scientific data is available to support the significant health claims have been reported from Kombucha lovers everywhere. While scientific data has not been done to back up claims, we don’t want to completely ignore them either, so here’s a few:

Scientifically proven facts are that the beverage contains

Like anything, Kombucha should be enjoyed in moderation as it does contain some sugar, and trace amounts of alcohol and caffeine
Ultimately we drink it because it tastes good and we enjoy it!
