Thai-Inspired Red Curry Rice Noodles with Broccoli & Tofu šŸœ A quick and easy dish that's so satisfying and packed with flavour! Get the recipe:
1/2 package rice noodles
2 cups broccoli florets cut small
3/4 package tofu drained and gently press with towels to remove water
1 small onion finely chopped
2 cups sliced mushrooms
2 tsp oil
1 tsp kosher salt
1 tbsp ginger paste (or sub fresh ginger grated or 1/2 tsp ginger powder)
1.5 tap garlic powder
1/4 tsp pepper (optional)
1/4 cup red curry paste
1 can full fat coconut milk
Green onion and lime juice for serving

​Cut tofu into cubes and add to large pan with some oil, season with generous dash salt and garlic powder. Brown on a few sides and remove from pan (until later). Cook rice noodles according to package directions, drain, rinse and sprinkle with a touch of oil, toss. Separately, steam broccoli florets until just crisp-tender and let cool. Meanwhile, in the large pan you cooked tofu in, add oil, onions and mushrooms. After 7 min, add the rest of the items in ingredients list down to coconut milk. Stir well, let gently simmer for 5 min. Add tofu, noodles and broccoli. Stir and top with green onion and squeeze of lime juice.

Easy peasy 15 minute Chana Masala Recipe! .
Ingredients:
For the base

2 x 400g tin chickpeas
2 x 400g tinned tomatoes
3 garlic cloves minced
1 medium heat red chilli
1 thumb sized piece of ginger (1/2 grated and 1/2 finely chopped)
2 x 400ml coconut milk (optional to make it creamy as traditionally it's just tomatoes)
70g fresh or frozen spinach
Handful fresh tomatoes
200ml water
Spices & Seasoning
1 tsp cumin
1 tsp garam masala
1/4 tsp turmeric
1/2 tsp sea salt flakes
180g tilda basmati rice or 1 x tilda pouches

Crispy bottom Veggie BunsšŸ˜ - made with a simple no yeast dough & filled with crunchy green beansšŸ˜‹
Recipe (makes 10 buns)⁣
🌱Dough ⁣
- 300g [~2 1/2 cups] all-purpose flour (see notes below if using cups)⁣
-175ml [3/4 cup] hot boiling water⁣
- pinch of salt⁣
🌱Filling:⁣
- 1/2lb (250g) green beans, chopped⁣
- 16oz firm tofu, pressed & mashed⁣
- 1 small carrot, finely chopped⁣
- a handful of chopped cilantro⁣
- 2 teaspoons toasted sesame oil, 1 teaspoon salt, a few shakes of white pepper⁣
🌱Other ingredients: oil for cooking, sesame seeds, chopped green onion⁣
⁣
āœ…To make the dough, mix flour & salt in a large bowl until well combined. Make a well in the middle & pour in hot water. Using a spatula, fold in all flour until a shaggy dough forms with no dry spots of flour in the bowl (if it does, add cold water, 1 tablespoon at a time). Transfer flour to a cleaned surface & knead until a smooth dough forms, about 10mins. Cover with a damp towel & rest for 30 mins.⁣
āœ…Meanwhile, place tofu in a cheesecloth bag & wring out all the liquid. Saute chopped green beans with 1 teaspoon oil in a pan for about 1-2 mins. Add green beans into a bowl along with tofu, carrot & seasoning ingredients. Mix well & divide the mixture into 10 portions & form it into a patty-like shape.⁣
āœ…When ready, dust flour on the surface, roll dough into a log & divide into 10 equal balls.⁣
āœ…To assemble, take one dough, flatten it with your palm & roll into a wrapper, about 4.5 inches diameter by keeping the middle part thicker Place one filling patty in the middle & pleat to seal. Dab the smooth side with water then gently press in some sesame seeds.⁣
āœ…To cook the buns (baked/pan-fried), see comments sectionšŸ‘‡šŸ»...⁣ šŸ“Note: To measure flour in the cup, I used the spoon & sweep method. Spoon flour into a standard measuring cup, then level the top with a knife without packing the flour, which I had about ~63g in 1/2 cup.

Kung Pao cauliflowerā£šŸ”„
Perfect over some steamed rice for a delicious meal! Recipe below: ⁣Ingredients:⁣
1 small head cauliflower, wash & cut into florets⁣
1 small green bell pepper, cubed⁣
1/2 small red onion, cubed & 2 cloves garlic - sliced⁣
1/4 cup dry roasted cashews⁣
4 dried Thai chilis/red chilis⁣
oil for frying and cooking⁣
⁣
Batter ingredients: Mix 3/4 cup all-purpose flour, 1/4 teaspoon salt, a few shakes of white pepper in a bowl with 1 cup of cold water until well combined. The batter should be on the thicker side.
Dip cauliflower florets in batter, shake off excess & fry until golden brown. (I used a small saucepan) Drain excess oil on a paper towel. (Bake version: grease a baking sheet pan with oil, place battered cauliflower florets on the pan. Bake at 485F until light golden brown for about 20-25 mins, be sure to flip halfway & brush a florets with oil, if needed. For the last few minutes, you may broil to get a crispier texture) ⁣Sauce ingredients: Mix together 1/2 tablespoon dark soy sauce, 1/2 tablespoon sugar, 2 tablespoons soy sauce & 1 tablespoon Chinese cooking wine/sherry in a bowl & set aside.⁣

In a heated nonstick pan with 1 teaspoon oil, sautƩ onion, garlic, bell pepper, dried chilis until fragrant. Add sauce and cook mixture for 10-15 seconds. Then, add cauliflower florets, cashews, and coat cauliflower well with the sauce. .

Vegan Buffalo Chickpea Tacos with cheese sauce

Buffalo chickpea sauce

1 tbsp Safflower oil

1 medium sized onion, chopped

2 cloves of garlic, minced

1 bell pepper, chopped

1 1/2 cups cooked chickpeas (or one 15 oz can, drained and rinsed)

1/2 cup tomato sauce (passata)

2 tbsp plant-based milk

1 tbsp lemom

Spice mix: 1 tsp onion powder, 3/4 tsp molases, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp ground cumin, sea salt, ground pepper, and chili powder to taste

Tortillas:

10 small tortillas about 14 cm in diameter

Instructions

Using a fork, roughly mash the chickpeas in a bowl.

Heat oil in a pan/skillet over medium heat and add the chopped onion and bell pepper. Cook for 3 minutes, then add garlic and spice mix and sautƩ for a further minute.

Add all other sauce ingredients + chickpeas to the pan and bring the mixture to a boil. Let simmer on low heat for about 2-4 minutes, stirring occasionally, then turn off the heat.

Taste the mixture, if you want it spicier, add more chili powder to taste.

Preheat oven to 410 degrees F (210 degrees C) and line a baking sheet with parchment paper.

Place about 2 tbsp of the filling onto each tortilla and roll them up tightly. Place every tortilla seam-side down on the baking sheet, next to each other.

Brush them with a little bit of safflower oil (to make them even more crispy). Bake in the oven for about 15-20 minutes or until they are golden brown and crispy.

Drizzle with vegan cheese sauce (optional). Enjoy with your favorite dip!
