Treat yourself to these fluffy pancakes 🥞

American Pancakes Recipe

Ingredients (for 6 pancakes):

125 g wheat flour

100 ml milk

60 g sugar

1 egg

3 g baking powder

A pinch of salt

1 teaspoon vanilla extract

A k**b of butter, for serving

Method:

In a bowl, combine the flour, baking powder, salt, and sugar. Add the egg, vanilla, and milk, and mix again until you have a smooth, lump-free batter.

Lightly grease a hot pan with a little butter and pour a small ladleful of batter into the center. When bubbles appear, flip the pancake. Once golden, remove it. Continue cooking the rest without re-greasing the pan.

Stack the pancakes to keep them warm.

Serve with a small piece of butter on top. You can add honey or your favorite syrup, nuts, or berries.

Chickpea & Spinach Nuggets

Ingredients (about 30 nuggets):

400 g cooked chickpeas

150 g fresh spinach

60 g cream cheese

1 egg

1 garlic clove

3 sprigs parsley

2 tbsp rolled oats

Salt

For breading: flour, 2 eggs, breadcrumbs

Oil for frying

Method:

In a pan with a drizzle of oil, sauté the spinach over high heat for a couple of minutes. Transfer to a plate.

Rinse and drain the chickpeas. Place in a bowl and mash with a fork into a paste. Add the egg, cream cheese, finely chopped garlic and parsley, a pinch of salt, and mix to combine. Fold in the reserved spinach until the mixture is uniform. Add the oats and let rest 10 minutes.

Scoop tablespoon portions and dust with flour, shaping into nugget forms. Dip in beaten egg, then coat with breadcrumbs.

Fry in a pan with a little oil until golden on both sides. Drain on paper towels and serve with your favorite sauces.

Note: You can refrigerate them or freeze them in bags for later.

MARMITAKO RECIPE

Ingredients (serves 6):
600 g fresh albacore tuna (bonito)
1 kg potatoes
1 onion
2 green peppers
2 garlic cloves
250 g crushed tomato
1 l fish stock (fumet)
1 tbsp choricero pepper paste
Salt
Extra-virgin olive oil

Method:

In a pot with a splash of olive oil, gently sauté the chopped onion, green peppers, and garlic over low heat with a pinch of salt until they start to color. Stir in the choricero pepper paste and the crushed tomato; cook 5 minutes.

Peel and “crack” the potatoes (cut partway and snap to break). Add them to the pot, season with salt, and cover with the fish stock. Simmer covered for 25 minutes, or until the potatoes are tender.

Add the tuna cut into medium cubes, let it simmer 2 minutes more, then turn off the heat. Rest 5–10 minutes and serve.
