Finally got my countertop installed. It isn’t really the ideal unit for this space, but I can always upgrade later, and it’ll certainly do just fine as a stable horizontal surface in the meantime. Fermenters will sit underneath on dollies so they can easily slide in and out. The floor corker has been mounted to the counter for ease of bottling.

I finally got around to installing the commercial deep sink and the supply/drain lines, and then leak testing everything. Counter tops are next. The sink frame needs a paint job, and I’m probably going to go ahead and put a facing on the front and sides to make it look nice, but this is major progress towards being able to finally apply for my federal/state winery licenses, and the requisite health inspection. One step closer to Hollow Hills Meadery being able to officially open its doors.

Four more winners at the 2022 Orpheus MeadFest in Denver, CO!

• ‘Otherworld Light’ (orange blossom honey, hibiscus, and hawthorn berry) took bronze 🥉 in the Fruit & Spice Mead category;
• ‘Flame of Kildare’ (fireweed and raspberry blossom honey, fresh raspberries, and lactose) took bronze 🥉 in the Experimental Mead category;
• ‘Black Sow’ (meadowfoam blossom honey and black truffles) took silver 🥈 in the Spiced/Vegetable Mead category;
• And finally, ‘Heritage’ (maple blossom honey) also took silver 🥈 in the Traditional (Semi-sweet) category!

The competition this year was VERY tight! Congratulations to everyone who participated and went home with medals!

All the drywall and mudding is done. I had to take a break on the Meadery side for a while to build an extra bedroom on the other side of the garage, and life got in the way with retiring from the military and finding civilian employment, but now I’m back into it and the next steps are painting, installing the sink, installing countertops, building shelves, and finally applying for my licenses to produce and sell commercially.

Almost done with installing drywall.

Plenty of mudding, and sanding, and more mudding left to do. And priming, and deciding on paint colors, and painting, and installing countertops, and building and installing massive wall-to-wall honeycomb bottle shelves, and all that fun stuff left to do, but things are coming along.

Floating the ceiling in the meadery. I don’t have access to a drywall lift at the moment, so I’m doing it by hand, half a panel of sheetrock at a time. Not an easy task by oneself. Slow and steady, a little bit at a time, and it’ll be done before I know it.

Three more medals from the Texas Mead Cup / Operation Fermentation VIII:

‘Wingfoot’ strawberry and saffron mead won first place 🥇 in the Fruit and Spice Mead (M3A) category, scoring 42 out of 50 points with the judges.

‘Otherworld Dark’ buckwheat honey, sloe, and blackberry mead won first place 🥇 in the Melomel (M2E) category, scoring 47 out of 50 points.

‘Flame of Kildare’ raspberries & cream mead won third place 🥉 in the Experimental Mead (M4C) category, scoring 39 out of 50 points.

Only one more section of wall is left to sheet rock, and then I’ll be ready to put up the ceiling. I think I’m done for ...
