Dark Sky Update ✨ The Dark Sky Roast consists of 100% Colombian coffee from the Huila region in the mountains toward the Pacific coast.

🍫 Roasted just into 2nd crack brings its flavor to a rich dark chocolate bite at the beginning and a fairly smooth vanilla, caramel, and almond flavor as you drink it.

☕️Try it with a French Press, cold brew, or regular drip coffee maker. The flavor is strong enough to not be overwhelmed by adding milk, but is smooth enough to drink neat.

🍂 Moving into fall, we will be staying in East Africa and enjoy a classic Kenya coffee.
🌶️This cup will have all the complexity you would expect. It starts with a bright acidity and a little African spice up front.
🫖As it cools a bit, you can pick up a bit of apricot and maybe a hint of almond and black tea. This one is a bit hard to accurately describe in detail, but it is definitely delicious!

📍Next stop: Yirgacheffe, Ethiopia! 🇪🇹
🌦️As we enjoy our monsoon season, our coffee tour will take us to the birthplace of coffee, Ethiopia.
💐I found an excellent heirloom Yirgacheffe, specifically the high altitude Gedeb zone. We will keep this roast pretty light, to highlight the lovely floral aromatics. 🌰This cup is clean with a light acidity, and the beans that make it into the more medium roast will add a bit of nuttiness, cocoa, and spice. You also may want to let it rest a few extra days to avoid the wild grassy notes. Enjoy!
