Gauker Farms is proud to be an 8th, 9th, and 10th generation family farm in Berks County - now that's sustainable! We are a 260 acre crop farm raising corn, soybeans, wheat, and hay. We also raise about 70 head of Holstein steers that we market through a small, on-farm shop by appointment only, and at farmers' markets in Berks, Chester, and Lehigh Counties. Gauker Meats' mission is to raise qualit

y, wholesome beef that you and your family are proud to serve on your dinner table, and that tastes delicious! Our Holstein steers are purchased from our neighbors and friends, and raised from days old until they are finished at about 14-18 months. Our steers are fed a grain mix that we raise on our farm. 👋 Hiya, friends! 👋 Just got back from a work trip. I’m now besties with a new-to-me- ass ❤️😍!

This is your friendly reminder:

👏 We 👏 are 👏 CLOSED 👏 Saturday!
Yes, this Saturday, right before Father’s Day, we are closed.

Cheese and I are taking a (cheesemaking) class Saturday during the exact 2 hours I’m usually open.
(I can be open Saturday after 1 if needed for your Father’s Days needs by appointment! But don’t count on me.)

❤️🥩 OPEN FRIDAY 3 pm to 7 pm THIS WEEK! 🥩❤️

Yes, we’re closed Saturday but you can still get your beef fix Friday. (And if you beg and plead, I may or may not be back Saturday afternoon - depends on the amount of trouble we find ourselves in during our cheese class!) 🤪❤️

Specials for Friday coming soon!

Thanks a bunch and see you soon! 🥩❤️

👋 Hiya from the funny farm! 👋

Cheese and I had BIG weeks!

Cheese finished up 4th grade. She moved to the middle school next year! While Cheese gives about zero attention to school work and all attention to the humans around her and conversations she’s not actually apart of, she has a tendency to drive her parents absolutely bonkers. 🤪 Yet, she’s a pretty good farm kid, so we’ll keep her. Her Grandpa has been helping her walk her steers in the evening, she has been walking her 4 pigs most nights (or maybe they’ve been walking her) and today was day 1 of Camp Farmer Dad as she will be with Lee at least 2 days per week this summer. Earn your keep, kid! 😂🤣

I picked up beef and sprayer parts Monday, attended a farm transition coordinator conference Tuesday, attended a Girls Who Grill event in Carlisle Wednesday which was absolutely fabulous (!), delivered beef Thursday and celebrated the last day of school with Cheese Friday. Saturday we worked at home and enjoyed a steak and hot dog (for Cheese) dinner and we had Sunday Funday at Setter Ridge Vineyards in Kutztown with Hannah Violet Band where we met friends, blended in with the crowd, and loved the great tunes and company.

This week, all work and no play until after Cheese’s dance recital Saturday! But after that, mostly fun and games for the summer. 🤣☀️🕶️

This Saturday, because of Cheese’s recital, we will be open 10-11:30. Next week we are closed Saturday because Cheese and I are taking a (cheese making) class, but we’ll be open Friday night 3-7! 🥩❤️

Wishing you a week full of beginning of summer fun, fueled by beefy meals, and we hope to see you soon! ❤️🥩

👋 Hiya from the dance parking lot! 👋

Welp, where do we start?! It’s the last week of school and everyone is still living. I’d be lying if I said we’re all cool, calm, and collective. That’s not a thing right now. It’s a race to the school, planting, spraying, hay making finish line. On the beef front, the freezers were the emptiest they’ve ever been until I picked up this morning. Cheese is very excited for middle school next year and end of year celebrations. Conveniently I’m traveling much of this week for work and extra curricular fun, and so we’re relying very much on our village for all of the things.

Tonight I did make myself get outside and see Cheese’s steers and pigs. I don’t even know which steer is who this year. It’s just been wild. Pigs - I’ve got them. They’re looking pretty good for right now. Very athletic. Very - did you even ever walk these things ever really?!? So it appears we will be having hog de-wild boot camp next week when my travels pause and there’s no required bed time schedule. 🐷🐷🐷🐷

The beef shed will be available Saturday 10 to noon for your beefy needs. Back in stock: filet mignon, bison patties in 4 and 6 oz, chipsteak and hot dogs. Temporarily out of chuck roasts, bone in ribeyes, and Porterhouses. Fear not! We have sirloin tip roasts and T-Bone steaks for fulfill those beefy cravings.

Wishing you a week full of blue skies and beef-ful meals, and we hope to see you soon! 🥩❤️

👋 Hiya from the dance class parking lot! 👋

Only a few more weeks of these fun and games. Then it’s off for the summer - and a few summer ballet and leaps and turns classes for good measure. Cheese has 8 more days of school and, yes, she is counting. Then it’s fun and games! Miss Faith - if you’re reading, your girl hopes she can still come see you even though her mom is constantly behind and was several weeks turning in her day care registration form. 🤣🤦‍♀️🤦‍♀️🤦‍♀️

Lee is living is best life this week. He has work lined up for days and hopes to farm his own stuff this week. There’s spraying to get done and hay to make. He’s keeping pretty busy in his only partially gainfully employed days. We still only see him when I’m traveling for work or for dinner at some hour that’s convenient for him. 🤪

Me? I’m saying yes to some really fun opportunities that have come my way this year. Two weeks ago ai was the emcee for the Best Butcher Competition in State College where 11 butchers from 5 states broke down a chuck roll and a pork loin in 45 minutes each using the knives and tools they brought, and then gave a 2 minutes pitch on their cuts and what consumers should try. So fun! And then I ended up on the State College evening news talking about the need for butchers and demand for beef. Then! Last week I spoke to Small Business Development Center specialists on how to work with farm and food businesses to get them ready for financing. Then today! Today! I was interviewed by a dietician from Giant and Martins Food Stores as a part of their RD Talks series to share our beef story and how consumers can know they’re getting wholesome, tasty beef no matter if they’re shopping from the grocery store or direct from their favorite local farmer. And! Next week! I have the opportunity to participate in a Girls Who Grill event! If you know me, you know Lee grills because if I walk away I have forgotten about that grill and our steak is toast. I hope to learn some new tips and tricks to share with all of you! 🥩❤️

All of that to say, we’re in the thick of May-cember - and all of the holiday, celebration, end of school year, birthday magic that this month holds. We hope to see you in between the work! Open Saturdays 10-12 in May and June EXCEPT 6/20. That day Cheese and me are taking a fun food class together. 🧀

Thank you for supporting our hot mess family farm through following around and sometimes even sharing our beef on your family tables. 🥩❤️

🎉 Happy Mother’s Day to our friends and family who are moms, want to be moms, miss their moms, and serve in mom roles to others (yes - even the moms of your friends group - you know who you are)! 🎉

I was celebrated so well today. I attended a Pound fitness class with my favorite mom instructor at April J Yoga. I came home and enjoyed a breakfast of leftovers on the porch with Cheese who tried her best not to spoil presents with stories of her shopping adventures with Lee yesterday but failed miserably as she does. Cheese had 43,568 words in before 11 a.m. and she proudly announced she didn’t get up until 9:23 a.m.

I received a pot of flowers, 2 fun pairs of earrings and matching chokers that Cheese and I wore today with our matching shirts. We were basically a walking advertisement for our favorite store, Stockyard Style. 😂🩵 After a much needed shower and nap, we drove around and went for ice cream at the new Nesting Box store in New Tripoli. I got toasted coconut and caramel Heath bar. So good. 🍨💕

Tonight I have some scalloped potatoes in the oven and Lee is going to grill a Bavette steak. I’m excited to try it because we haven’t made one yet! You’ll surely hear all about it soon. 🥩❤️ If you were wondering what Cheese’s daily word count is now, I stopped listening and told her to be quiet for a little while no less than 4 times when we were in the car for ice cream alone. 🤪

Planting season is well underway with beans in the ground and corn on deck. I think hay is coming in hot, too, so that will add to the farm fun soon. 🌱🌽

Thanks a bunch for following along, and we hope to see you soon! Open in the shed every Saturday in May! 🥩❤️

Oh, hey, hiya! 👋

Thank you for being here. Plant ‘26 started today. As of 5 p.m. Lee has 2 fields of soybeans planted and plans to plan all night until it starts raining for real tomorrow. 😂

As of 5:00 p.m. Cheese is out there walking Wilbur, Sweetie, Wind, and Cutie. (I think.) She’s walking her 4 pigs. 🐷🐷🐷🐷 As in past years, our pigs come directly from ACEC Farm. We love supporting local, and also Chad and Alice are fabulous humans we know and love. 💕

Me? I’m working from the recliner until dance class. 😂 We are currently out of ground beef but restocking likely this week. We have lots of steaks. Roasts are limited. Well figure it out together. 😂 I may also have a quarter or half available in June. If you’re interested please let me know ASAP! I haven’t raised prices on those but likely will soon.

New! A’Dello Winery in Perkiomenville, a mere 40 miles from the farm, is now carrying our beef sticks. Dom used to do the Antietam Valley Farmers Market with me years ago when in was on a Saturday before Lee decided that was his gig 😂 and then I joined them on Monday nights for a brief bit before my kid and her social calendar got to be too much. Anyway! Dom and Tina are good friends and have a great thing going. If you’re looking for a low key Saturday or Sunday Funday, we highly recommend their place. We really enjoyed Mystic Warrior there on Sunday! (Dairy farmer by day - rock star by afternoon and night. IYKYK!) Lee sang along the entire time - even to the “adapted” lyrics. (Also IYKYK.) 🤘

Updates:
🍔 fully stocked on beef except ground but will be stocked on that, too, soon
🍔 planting season has started and I’m a single mom except for Sundays and Rain Days
🍔 go see our friends at A’Dello on Saturdays and Sundays - you won’t be disappointed
🍔 May is beef month and I’m going to be sampling something every Saturday for the rest of May. You’ll have to stop by to see what’s cooking.

Ok! I’m going to send Mother’s Day cards now. It’s a thing I do. If you need a reminder to send your mom a card before Sunday, this is your reminder, too!

❤️🥩 Thank you for supporting our hot mess family farm. We appreciate you. 🥩❤️

👋 Oh, hey, hiya from the funny farm! 👋

I know - a late night update. Who does that?! I do, apparently. It’s been a little wild over here.

Friends - we have a good problem. I keep running out of ground beef. 🫣 I know. It’s a good problem. We raise some tasty beef and it’s in high demand. I actually sent an extra steer to the butcher tonight because I have SO MANY friends that want more beef than we have.

So! I have NEW things. What new things?! Bavette steaks are back! These are sirloin flap steaks. They have the same grain as a skirt steak, but more tender. More beefy flavor. I think you’ll love them. They’re over 2 pounds each so they’ll feed a family.

Coulotte steaks! These are also known as pichana steaks - well known, and loved, at Brazilian steakhouses. I saw these cut from the sirloin during the butcher demonstration at the beef producers meeting I attended in NY this past weekend and learned more about how to prepare them - season well on all sides, cook fat cap down in a cast iron skillet, flip, and finish in the oven for about 20 minutes to medium rare.

Also! Open every weekend in May from 10 to noon. I was going to take a birthday vacation, but I’ve been traveling so much the past month (and a few more work trips ahead) that I’m making it a staycation. Look for a birthday sale forthcoming. I’m just finalizing my work travel and then I’ll nail it down.

So! We’ve got your beef! And pork! And we can’t wait to fill your freezer. And chances are, when you visit us on Saturday mornings, you have the excitement of Cheese walking her steers or pigs. 🐮🐮🐮🐮🐷🐷🐷🐷

Wishing you a week full of springtime adventures fueled by beefy meals, and we hope to see you soon! 🥩❤️

👋 Hiya from Saratoga Springs, NY! 👋

Just a friendly reminder that we are closed today, Saturday, 4/25, as Jodi is attending the Northeast Beef Promotion Meeting with about 80 of her beef besties, and Lee and Cheese are living their best, feral lives at home, blissfully unaware of anything relating to the beef freezers and what is and is not in them. 🤪

We’ll return to your regularly scheduled beef slinging next week. 🥩❤️

Hiya, friends, from the dance parking lot! 👋

I’m late. Cheese is coming soon. Let the silence linger a LITTLE longer. 😂🤣

I will be CLOSED this weekend. I’m attending a conference with beef producers from I think at least 8 states up in Saratoga Springs. Lee and Cheese will be home but they’ll be vastly unhelpful to you - as in doing chores and walking critters and no beef slinging available. I WILL be OPEN Thursday! Meet me in the shed from 5 to 7 for your beef, pork, lamb, and bison needs.

We have our 2026 pigs! They’ve arrived! We will only have 2 pigs available this year for customers - not 4 like this year - so prepare accordingly. We still have lots of pork available from our 2025 pigs, and that’s what drove this decision. If you prove me wrong in 2026, I’ll adjust for 2027 and we’ll play this game again. 😂🤣

Come see the bacon seeds this Thursday, get your beef fix, and be ready for a great weekend. Chipsteak for your favorite cheesesteaks should return before Thursday.

Thanks a bunch, beef buddies, and see you soon! 🥩❤️
