Happy Monday folks! This weekend I experimented with a new chicken wing recipe and it’s not finished however, it was fun to play with. This is a Drunken Oyster Sauce Bacon Honey Wing! I used fresh and black garlic along with Serrano peppers and orange blossom honey. It’s a work in progress but kinda fun to play with this from a thought to plate. Have a great week!

So I made another batch of my award winning Six Pepper Fire-roasted Salsa! While this batch turned out a little more green overall, I tell folks that the color is generally tied to the colors of the Heirloom tomatoes that I use and the majority of these were green. I use and roast six different peppers; three for heat (jalapeños, Serranos, and habaneros) and three for flavor (pasilla, Anaheim, and yellow wax). Lots of garlic to make a vampire blanch, lime juice, cilantro, red onion, and sweet white onion. I have little variations I will do depending on the pepper availability or maybe throwing some shallots or roasting the garlic. This batch was the original recipe!
