Our final bok choy harvest of 2026 is headed to 🌱

This crop feels extra special , grown with care through the season and today harvested with helping hands from our dear friend .with.kelley. There’s something about sending off the last of a harvest that feels both full-circle and a little bittersweet.

Grateful for the soil, the season, and the community that brings it all to the table.

Sometimes the farm brings exactly the right people at exactly the right time.

Our longtime friend is staying with us for a bit to experience and learn more about farm life here at Enchanted Acres. In return, she’s been sharing something just as valuable with us — meditation, breathwork, and the art of slowing down and centering. ✨

There’s something special about starting the morning with animals, open sky, and a few intentional breaths.
If you’d like to meet Kelly, she’ll be joining us tomorrow at with her beautiful children’s book about chakras and centering — a wonderful way to introduce mindfulness and emotional balance to little ones.

Some mornings on the farm come with a little extra surprise… and today it was a BIG one.

One of our Naked Neck hens laid an absolute whopper of an egg few days ago and we finally got around to filming it. weighing in at 100.88 grams. When we cracked it open… double yolk!

Eggs this size don’t happen every day, and they’re always a fun reminder of the little marvels that come from careful breeding and happy hens. Our Naked Necks continue to impress us with their hardiness, productivity, and personality.

Farm life never gets old when a hen decides to show off like this.

After two days of rain, the first plum blossom opened in the orchard. 🌸

The trees soaked it all in, and this morning tiny flowers decided it was time. It’s always amazing how quickly the orchard wakes up once the rain comes.

That first bloom feels like the official start of the season. The beginning of thousands more blossoms, busy bees, and the promise of fruit!

Some days hold a full circle of life in them.
My morning started at my oncologist/hematologist’s office for more blood work . Part of my ongoing journey managing my health. From there I did something small but refreshing… Finally getting a much-needed haircut. Sometimes those little moments feel big.

Tonight ended in the most beautiful way at , hosted by the incredible Elizabeth Johnson in partnership with ThriveWell. The evening was centered around encouragement for cancer screenings, conversations about healthy living, and how food can truly support the body through anti-inflammatory nutrition.

Pharmtable prepared an incredible meal, and the main course featured bok choy from our farm. Seeing food we grow from our soil become part of such a meaningful dinner was deeply special.

I had the opportunity to share a bit about our farm and also the health journey that has shaped our lives. I was born with mosaic trisomy 15, and over the years I’ve navigated very confusing and difficult autoimmune conditions. With my most recently a diagnosis of hemochromatosis. I am still learning , figuring out how this has affected my body thus far. My risk for the future. I am still in the beginning stages of my diagnosis and testing. Its been scary at time and yet validating at other times. Through my son's genetic testing I was diagnosed. which is absolutely amazing to me!

Having had a grandmother with similar autoimmune issues, who suffered different types of cancers for many years. I can without a doubt say she had untreated hemochromatsis. It is hereditary , linked to various cancers & liver disease. Few ppl get tested even with symptoms.

For our family, our farm and the food we grow isn’t just a lifestyle choice. It’s the foundation of how we care for our bodies and our future. Our connection to the land, to our food, and to the way it nourishes us runs deep.

Tonight was a reminder that food is medicine, community is healing, and sharing our stories matters.

After a long, dry stretch, our orchard is finally waking up. Buds are swelling, fresh leaves are pushing out, and the trees are stretching back into the season. There’s something hopeful about watching an orchard come back to life.

We’re also incredibly grateful for the support that helps make this possible. A huge thank you to Cody Brown with NCAT for nominating Enchanted Acres for a grant to install irrigation in the orchard and replace our well pump. Access to water is everything here in South Texas, and this kind of support helps keep our trees — and our farm — growing.

Feeling thankful today for new leaves, new growth, and the people who believe in what we’re building.

If I didn’t film this… you truly wouldn’t believe it.
This determined little hen has been trying to hatch… a BOWL. Yes. A literal bowl. Not once ... but twice. I took it away the first time, and she marched right off and found herself another one to sit on like the proudest mama you’ve ever seen.

The commitment. The confidence. The complete misunderstanding of basic biology. šŸ˜‚

Don’t worry! We finally set her up properly. She’s now sitting on a beautiful rainbow dozen of real eggs. She was very persistent on staying in the broader base. So we added hay , a little door and cleaned it out for her.
Farm life keeps us humble and endlessly entertained. And if you ever doubt that chickens have personality… come spend a day out here.

Our ā€œlittle piggyā€ is now 500-ish pounds… When she came to the farm she wasn’t even a pound big. She fit in my hand! Watching her grow into the powerful, intelligent, loving soul she is today has been one of the greatest gifts of this farm life.

We use Rocksteady to help educate people about pigs ,how unbelievably smart they are and the incredible benefits they bring to a regenerative farm. They are intuitive, emotionally aware, trainable, and deeply bonded to their people.

One of the biggest misconceptions we love to break? That pigs are dirty.

Pigs are actually very clean animals. When given space, they separate their sleeping areas from their bathroom areas naturally.
It’s heartbreaking that being labeled ā€œdirtyā€ has justified so much poor treatment of such intelligent beings.

People see Rocksteady. Her size, her rough hair, her strength and often get nervous.

We see her piggy kisses, her cuddles, the way she leans into you for love. She truly LOVES everyone that comes to the farm. Shes very willing to roll over for belly rubs. Adores when we have farm tours and she gets to meet all the kids! Anyone whos met Rocksteady are instantly falls in love with her . She protects this farm like our dogs do… Honestly, she listens better than the dogs. Fun fact: happy pigs smell like maple syrup!

I couldn’t imagine Enchanted Acres without her. No matter how big she gets, she will always be my little piggy.

This morning I stood at the Wilson County meeting to speak against the proposed 2,500 acre data center.
I was overwhelmed , in the best way , seeing so many of you show up, speak out, and stand together. When the water usage numbers were read aloud, it hit hard. Sometimes we forget what those numbers truly mean… it’s not just statistics.

It’s our water.
It’s our wells.
It’s our land.
It’s our livelihood.

I didn’t speak in numbers today , I spoke in truth. Truth that this kind of development could drive out the last standing small farms that are already fighting to survive. The families working sunup to sundown to steward this land regeneratively and organically. The farms feeding our community real, clean food.

With my background in conservation, working with multiple high schools and UIW, receiving grants and awards that showcase the work being done right here in small-town America , in OUR community , I can say with certainty: this matters. All of that work means nothing if we lose the very resource that sustains it.
Remember , you have power!

You have the power to vote.
You have the power to demand action.
You have the power to protect Wilson County water.
