Cajun Cabbage Jambalaya
Ingredients:
1 medium head of cabbage, chopped
1 lb. smoked sausage (such as andouille), sliced
1 lb. chicken thighs or breasts, diced
1 medium onion, diced
1 bell pepper (green or red), diced
2-3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (with juice)
2 cups chicken broth
1 cup long-grain rice
2-3 tbsp Cajun seasoning (adjust to taste)
1-2 tsp hot sauce (optional, adjust to taste)
Salt and pepper to taste
2-3 green onions, sliced (for garnish)
1-2 tbsp olive oil
Instructions:
Sauté the Sausage and Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and diced chicken. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the meat from the pot and set aside.
Cook the Vegetables: In the same pot, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, about 3-5 minutes.
Add Cabbage: Stir in the chopped cabbage and cook for another 5-7 minutes, until the cabbage is wilted and tender.
Combine Ingredients: Return the cooked sausage and chicken to the pot. Add the diced tomatoes (with juice), chicken broth, rice, Cajun seasoning, hot sauce (if using), salt, and pepper. Stir well to combine.
Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.
Adjust Seasoning: Taste and adjust the seasoning if necessary, adding more Cajun seasoning, salt, or pepper as desired.
Serve: Once cooked, remove from heat and let it sit for a few minutes. Garnish with sliced green onions before serving.
